This 8th June 2024, the resort launches the new restaurant opening and celebrates the arrival of the Milanese culinary legend - Paper Moon - providing an unforgettable dining experience, steeped in tradition and infused with contemporary elegance.Fairmont Taghazout Bay is delighted to introduce the opening of the renowned Milanese restaurant, Paper Moon, promising an unforgettable dining experience. Established in 1977 in central Milan, Paper Moon now brings its legacy to this exceptional ocean-side location, on the Southern coast of Morocco. Over the years, the culinary institution has captured the essence of traditional Italian cuisine while adapting to modern trends.

The new Paper Moon will open its doors on June 8, 2024, enhancing Fairmont Taghazout Bay’s gastronomic offerings and solidifying its position as a premier culinary destination. Claudio Bertoni and Stefania Galligani, partners of Paper Moon, express their excitement about this new collaboration: “The vision that the founders established in the late 1970s is the same guiding principle that we apply globally. After leaving our mark in several culinary destinations such as London, Hong Kong, Bodrum, and Doha, the much-anticipated opening of Paper Moon in Taghazout Bay represents a significant milestone in our journey”.

More than its gourmet offering recognised by the outstanding savour, the new venue is being set apart by the overall dining experience – stepping into a casual, family-friendly atmosphere to capture the Italian essence and strengthen the feeling of “home away from home”.

Along this new entrance, the hotel already boasts a unique collection of restaurants: Tapa Wine Bar, features a selection of fine and prestigious wines, blending perfectly with inventive tapas and dishes inspired by Spain, Morocco, Italy, Lebanon and Turkey; Beef & Reef, combines land and sea products with a Mediterranean touch. Finally, the emblematic Morimoto, helmed by Iron Chef Masaharu Morimoto, renowned for his culinary ingenuity and ability to push the limits of gastronomic creativity, blends Japanese traditions with Western techniques to offer innovative and delectable cuisine.
