Sydney Fish Market is proud to announce the appointment of Sean Connolly as its new culinary ambassador. In this role, Connolly will lend his expertise as a professional chef to the organisation as it enters a significant period of transformation.
Effective from December 2021, as the Market prepares for its famed 36-Hour Seafood Marathon, the role will see Connolly apply his culinary insights to the curation of food and beverage offerings on the Sydney Fish Market site, a refresh of Sydney Seafood School classes and strengthening connections between primary producers and seafood lovers.
Connolly says, “The best conversations, connections and moments of joy are shared over food. It’s the vehicle that brings us together and I’m incredibly excited to join Sydney Fish Market to share my passion for creativity in cooking with seafood lovers.
“My ethos for cooking is all about tradition over trend, provenance and simplistic creativity. Through my work with the iconic Sydney Fish Market, I hope to integrate these three cornerstones, and assist in the company’s exciting transformation ahead of its redevelopment.”
Construction of the $750million new fish market is underway, with the spectacular new building set to open in 2024. As industry leaders in seafood education, responsible sourcing and quality assurance, Sydney Fish Market intends to leverage the opportunities provided by the redevelopment to further enhance the customer experience. Future visitors will enjoy more visibility of the site’s wholesale operations, enhanced provenance information and an expanded events and education offering.

Sean Connolly, the visionary behind Sean’s Kitchen (Adelaide), Esther (QT Auckland) and The Wild Flower Bar and Dining (Killcare), is a chef with years of experience under his belt. His 30+ year career and uncompromising drive has since seen him win multiple awards and accolades, release his own cookbook and line of gourmet products, and star in his own TV series (in NZ & Australia).
To celebrate the ambassadorship, Sydney Fish Market has released the Sean Connolly x Sydney Fish Market – Seafood Essentials range of seafood accompaniments, formulated personally by Sean and available exclusively through the Market.
