QT Newcastle has announced Ryan Crothers as Executive Chef to spearhead its new era, further elevating the current success of the hotel. With Crothers at the helm, the designer hotel’s signature restaurant Jana will continue its bold culinary direction, adding a pinch of Positano to Steel City’s roots.
Sourced from the earth and ocean of the region, Crothers’ approach focuses on simplicity and a nose-to-tail philosophy, honouring each ingredient. His appointment brings a new spring menu featuring premium produce. Signature dishes include; homemade focaccia, prawn, garlic and chilli tagliolini, Fremantle octopus with nduja and heirloom tomatoes, grilled whole fish, and the locally sourced Hungerford bone-in rib eye. Each plate reflects a commitment to balance and flavour, drawing from the finest seasonal ingredients.
In keeping with tradition, desserts offer timeless classics including a tiramisu made with fresh coffee, Kahlua, and Marsala-infused zabaglione, alongside a perfectly balanced lemon tart.

Crothers’ deep connection to nature is reflected in his favourite technique – over open flame. “There’s something primal and honest about it,” he says. Inspired by Italian cuisine, his dishes blend rustic Mediterranean influences with the elemental touch of fire. From flame-grilled whole fish to tender, smoky meats, his menu captures the essence of both land and sea while celebrating bold, vibrant Italian flavours.
Born and raised in Lisburn, Northern Ireland, Crothers commenced his culinary career at the tender age of 14, working as a dish hand in a local pub to fund his weekend outings. By 21, he set his sights on Australia, following the footsteps of his brother Jamie. Ryan has cooked shoulder to shoulder alongside Nathan Johnston at the hatted Ivy, where he honed his skills and refined his approach. During his more recent tenure at Sydney’s Passeggiata, the restaurant secured a coveted spot in the 2023 Gambero Ross Guide, recognising it among the finest Italian establishments in Australia.
