With a motivated attitude, genuine enthusiasm for people and a deep passion in crafting exceptional cocktails, Siuming earned his recognition as a Finalist in the ‘Diageo World Class HKMO 2023’ competition and now the champion of the ‘Marvelous Agave Cocktail Competition’. The winning cocktail is a harmonious blend of Tequila Taddel Reposado, which sets the stage with its smooth and subtly oaked character; complemented with a touch of Rhubarb Flavoured Aperitif that adds a delicate sweetness and a hint of complexity, paying homage to the multifaceted culture of Mexico.

Yuki has merely a year of experience in the industry but has already made a name for herself by making debut and being recognized in the ‘Marvelous Agave Cocktail Competition’. Driven by her passion in mixology, she expanded her knowledge with WSET Level 2 in Wine and WSET Level 1 in Spirits. Inspired by works of Mexican artist Frida Kahlo, the cocktail embodies a balance of fruity refreshment and subtle spice, with Tequila Taddel Plata as the base spirit for its connection to artist’s Mexican heritage.

Eldwin started as a trainee in 2021 and is now a bartender at Ozone. He demonstrated his dedication to professional development during his journey and acquired WSET Level 2 Award in Wines from the Wine & Spirit Education Trust with merit. He brings us a refreshing, subtly sweet and well-balanced cocktail crafted with Tequila Taddel Plata, crème de cassis and kaffir lime cordial, topped off with ginger jelly garnish to add a playful textural element.

In just one year at Ozone, Stone has participated in several prestigious cocktail competitions and has been recognized as one of the Top 12 contestants in the Cointreau Margarita Challenge 2024. His creation ‘N³’, which represents NUKU, Nightcap and Nacho, is a harmonious blend of smoky, spicy and tangy elements crafted with NUKU Mezcal infused with jalapeño peppers that provides a bold, fiery backbone, while cherry tomato-infused Aperol lends bright acidity and fruity notes, complete with a tortilla as garnish to add a Mexican touch.

He created an innovative recipe for ‘Tales of Vampiro’ that presents a modern twist on the traditional Mexican Vampiro cocktail with NUKU Mezcal for its unique smokiness, elevated with hibiscus orange shrub and orange marmalade, offering a delightful fusion of sweet and tangy hints.

Tai O Kaiser (HK$ 95 per glass)

With 16 years of bar industry experience and being a certified Advanced Whiskey Ambassador and sommelier, Raymond has developed a profound understanding in wines and spirits, which he masterfully translates into cocktail creations. Capturing the essence of Lantau Island where he works, he puts a unique spin on the classic ‘Bloody Caesar’ to create ‘Tai O Kaiser’, replacing the traditional clam juice with Tai O fishing village’s shrimp paste. The original vodka base is also swapped out with the dry, complex NUKU Mezcal; and Chinese rice wine as a final touch to add an exciting complexity.

Peter starts his mixology career at Sky Lounge in 2016 as a Junior Bartender and is now the Supervisor of the team. As a tequila lover, he presents us a cocktail with Tequila Taddel Plata as the base and highlights its spicy and sweet profile with freshly squeezed pineapple, lime and cactus juices, adorned with a cactus garnish for an extra Mexican touch.
