Sunset Grill, with its panoramic terrace views over the Lantau mountains and the shimmering South China Sea, has unveiled a new à la carte menu which takes steak restaurant classics and elevates them with surprising twists. The stunning rooftop restaurant is also celebrating the reintroduction of its weekend brunch with an opening offer of 30% discount available only through e-shop.

Helmed by British Executive Chef David Parkin, who has carved a reputation out of some of the world’s hottest kitchens, the new menu reinforces the roots of Sunset Grill as a beef lover’s paradise with its traditional charcoal grill steakhouse and fresh seafood restaurant with a supporting cast of European crowd-pleasing creations to set the scene for a memorable celebration. Fired and Dry Aged to Perfection

At the heart of Sunset Grill’s kitchen lies the passion of the brigade to create flame grilled meats to perfection from pasture to plate. Executive Chef David’s personal passion for environmental causes sees him select beef cuts from cattle that have been raised and managed with care, traceable nutrients, and carefully managed land and pastures.

 Dry aged steaks are curated from across the globe which include 30-Day Dry-Aged Bone-In Steak from Kettyle, Ireland who are renowned for their salt moss ageing which concentrates the flavour of the meat; Stockyard cuts of grain fed Angus and Wagyu from Australia as well as A5 Striploin, Japan Kyoto to USDA Prime. Sunset Grill is also offering Herb Crusted Lumina Lamb Rack from New Zealand, from a new breed of speciality lamb famed for its tenderness. Lumina Lamb is farmed to sustainable standards with amongst the world’s lowest carbon footprints.

 European Classics Re-Ignited

Executive Chef David takes pride in knowing the story of his ingredients. With a respect for their provenance, he brings it to life on a plate. The new à la carte includes a pantheon of classics that have been recreated for a new generation of diners with touches to surprise and delight.

His new Argentinian Red Prawn Cocktail, Melon, Iberico Ham, Lemon Aioli is one such showcase. He said: “As a young boy, I would go fishing in the North Sea for prawns and I know how difficult their job is to bring this great ingredients to our table so I aim to do justice through each dish I create.”

Sunset Grill will also offer its take on a Hong Kong classic of Lobster Linguine. After 11 years in Hong Kong, Executive Chef David unveils his perfect creation, which includes prawns, a roast Tomato bisque, basil oil while his Foie Gras Torchon has a light touch of plum puree.

Diners can also choose from the Boston Lobster Bisque with Poached Lobster, Tuna & King Scallop Crudo, Avocado, Pickled Radish, Bloody Mary Gel or Crab Cake, Sweetcorn, Nudja, Spiced Coconut Broth.

Weekend Brunch

For ultimate alfresco weekend indulgences taken to the next level, Sunset Grill offers an unrivalled steakhouse brunch experience with a view.

Guests can enjoy a selection of appetizers and perfectly-executed dishes include Siberian Caviar Blinis, Foie Gras Torchon and Plum, Crab Cakes, Steak Tartare to crisp salads finished with a dessert selection. Small plates include Lobster Bisque, Duck Egg Benedict and more.

Main courses on offer will please meat and seafood lovers alike. Dishes include 340g USDA Prime Rib Eye for sharing, Australian Wagyu Hanger Tender to Atlantic Cod with Parsnips, Onion and Peas and Moules Meuniere.
