Pumphouse Sydney, nestled in the vibrant Darling Square precinct, has announced the appointment of Gary Ryley as the new Executive Chef of Culinary Outlets. In this role, Gary will spearhead the culinary direction of Pumphouse Sydney and neighbouring Novotel Sydney Darling Square, infusing his innovative vision and expertise to elevate the dining experience for patrons.

Bringing over a decade of culinary excellence to the table, Chef Gary’s renowned for his creative prowess and commitment to culinary craftsmanship. With a rich background spanning renowned establishments such as Jamie’s Italian in Covent Garden and the esteemed Marcus Wareing at the Berkeley Hotel, he is focused on a fusion of classic techniques with a contemporary flair.

Chef Gary’s culinary philosophy revolves around sourcing premium ingredients and reimagining traditional favorites with a modern twist. From his signature house-made Cumberland pinwheel sausage and mash to tantalizing desserts like sticky toffee pudding with butterscotch sauce, his menus cater to both new and returning guests.

Originally built by Sydney & Suburban Hydraulic Power Company back in 1891, the stunning new-look Pumphouse, which is attached to Novotel Sydney Darling Square, boasts an industrial design with design-led finishes, from the statement lamp shades over the bar which feature the work of Australian artist Lance Corlett, to the stunning timber bar and intimate wine room which is available for private dining and tastings.
