Hotel Metropole Monte-Carlo is pleased to announce the opening of its new fine dining restaurant, “Les Ambassadeurs by Christophe Cussac,” at the helm of Michelin-starred Executive Chef Christophe Cussac, further positioning it among the most coveted culinary destinations in the French Riviera.

Hotel Metropole Monte-Carlo’s new restaurant invites guests to discover and indulge in a reimagined fine dining concept reflective of its rich history, with a nod to the original “Les Ambassadeurs” restaurant that existed at the property in the 1920s. Following its opening, the original “Les Ambassadeurs” soon became an emblematic address of French gastronomy among the Monegasque and the hotel’s revolving list of noteworthy elite clientele of celebrities, aristocrats and diplomats.

Cussac’s new Les Ambassadeurs features elegant contemporary Mediterranean cuisine inspired by his own culinary heritage. Thoughtfully designed by Cussac over the course of two years, the menu follows his self-proclaimed “Cussac Style,” or approach of “three flavors per dish,” to respect the overall balance and ingredients of each plate. Guests will find that dishes reveal his deep-rooted love and passion for the French terroir charged by his ambition to provoke a delicate and rigorous emotion with each bite, with inspiration from his extensive work with the legendary Joël Robuchon.

Highlights include Sea Bream Tartare & Caviar Cannelloni, Lobster Lasagna delicately infused with Tarragon, Scorpion Fish & Olives from Nice, and perhaps one of his most intriguing dishes, Marinated Sardine with Caviar & Lemon from Menton. Available alongside the menu’s seafood-forward dishes are meat delicacies Entrecôte and Milk-Fed Lamb and Veal Chops, and the French-favorite Baby Pigeon, and more. All dishes are served to guests following a theater-like choreographed service across several “acts,” or courses, placing personalization and intimacy at the forefront.

Elegantly designed with luminous bronze, ivory and gold-hued tones reflective of the Mediterranean spirit by the acclaimed French architect and interior designer Jacques Garcia, Les Ambassadeurs by Christophe Cussac features a noteworthy “La Table du Chef,” or Chef’s Table, offering guests a spectacular 360-degree view of Cussac and his team at work, creating a sense of surprise and discovery for restaurant-goers. The overall design of the restaurant combines Cussac’s culinary style based on authenticity and transparency, with Garcia’s intention of creating a visually-striking, yet approachable atmosphere reflective of the “social dining” appeal that remains dear to Monegasque culture. An expansive al fresco terrace also awaits for those looking to dine while overlooking the Mediterranean Sea.

Esteemed guests will have the opportunity to experience the invite-only ‘backstage’ area of Les Ambassadeurs by Christophe Cussac, where the chef awaits for an intimate meet-and-greet and wine tasting, alongside a grand all-glass wine cellar containing a variety of exceptional vintage bottles and a den of sweet treats by in-house Pastry Chef Patrick Mesiano. Mesiano’s delicacies are highlighted throughout the Les Ambassadeurs experience across its surprise-and-delight ‘rituals’ for guests, which includes its signature and sensational bread and dessert trolleys.
