W Hotels are known for their epic collaborations and W Melbourne will be no different, kicking off their latest dinner series at Lollo, pairing a curated menu with a list of local farmhouse ales.

The one-off dinner is a collaboration with local boutique brewer La Sirène who alongside the Lollo team will curate a unique menu of six dishes paired with six of La Sirène’s most popular farmhouse ales.

A place to come together and celebrate, Lollo, has quickly become renowned for its remixed classics and bold innovative dishes, influenced by Creative Culinary Director Adam D’Sylva’s mixed multicultural heritage.

Two long share tables will take over the restaurant, as guests take on the ultimate culinary pairing of food and elevated ales, whilst a DJ spins vinyl and sets the scene for the night.

Guests can expect to see unique flavour combinations, such as aka miso aged duck breast taco paired with La Sirène Farmhouse Red.

Another highlight, the Ras el hanout spiced rack of lamb, with basil mousse, lime and caramel bigarade and mount zero olive tagine will be complemented by the La Sirène Age and Beauty.

La Sirène’s philosophy lies in brewing wild farmhouse ales, taking an approach that honours the origins of farmhouse brewing, combining age-old techniques with hyper local ingredients.
