Merging the culinary expertise of the renowned Fairmont Le Chateau Frontenac with the exceptional craftsmanship of the sculptors at the Hôtel de Glace de Québec, this extraordinary venue promises an unprecedented and refined dining experience. This three-course dinner, offered in the new space of the Hôtel de Glace, will celebrate the establishment’s 25th anniversary in style. WINTER MENU
Every Friday and Saturday from January 17 to March 15, 2025, 52 guests per service will enjoy a three-course menu in a completely icy environment. The meal will begin with a warm ball of bread served with boreal whipped butter. To warm the hearts of food lovers, this will be followed by a pastry-crusted soup with wild boar bacon consommé, foie gras, and a vegetable brunoise with porcini mushrooms, also available in a vegetarian version. For the main course, guests can choose between slow-cooked beef short ribs served with celeriac purée or a noricrusted panisse with rich vegetable jus, both accompanied by root vegetables in homage to comforting winter dishes of Québec. Finally, dessert will take the form of a snowball made of coconut and passion fruit, concluding this decadent dinner.
INSPIRED BY THE FOUR ELEMENTS
In a warm and refined atmosphere, guests will enjoy their meals amidst fur-covered ice benches for absolute comfort, while subtle lighting highlights the sculptures created by talented Québec artists. These works, elegantly embedded in the walls, will represent the four elements. On one side, fire takes shape in the form of a majestic volcano, evoking both power and warmth. On the other, a delicately carved windmill recalls the golden fields dancing in the breeze. At the center, finely crafted waterfalls and rivers illustrate the invigorating strength of water. Finally, a striking representation of the earth and its magma, rising straight from the ground, will surely amaze. Each element of this décor reflects a perfect harmony between nature and art, creating an unforgettable immersive experience.
DISCOVERY PACKAGE
A package has been created to offer participants a truly Québecois experience. For $225 + taxes and service per person, guests can head to the Chateau Frontenac, where a shuttle will take them directly to the Hôtel de Glace de Québec, where a welcome cocktail awaits. Once there, they will have the opportunity to tour the iconic Hôtel de Glace and discover its impressive creations. This will be followed by a unique dinner before returning to the city hassle-free thanks to the provided shuttle.
