In collaboration with Tim Tam™, Park Hyatt Sydney is bringing back its popular Tim Tam™ Afternoon Tea for summer. Available from December 4, 2026 – February 28, 2027, the menu celebrates familiar Australian treats and seasonal flavours with Tim Tam™, one of Australia’s beloved brands.
Highlights include the Tim Tam™ Mangoes & Cream Pavlova, with mango, Chantilly cream and lime, and the Tim Tam™ Iced Vovo Éclair, filled with raspberry jam and finished with coconut. A Tim Tam™ Chewy Caramel Sandwich layers chocolate biscuit with caramel ganache, while the Peach & Rose Roll pairs white peach marmalade with rose Chantilly.
Savoury selections include chicken and tarragon and cheese and onion finger sandwiches, pork and fennel sausage rolls, and chicken liver parfait brioche. Traditional buttermilk scones and malt and vanilla cream beignets, served with whipped vanilla mascarpone, seasonal jam and Tim Tam™ spread, complete the menu.
For the festive season, Park Hyatt Sydney’s mixologists have created three Tim Tam™ drinks. The Tim Tam™ Iced Vovo Bellini combines Tanica, peach and raspberry purée, aquafaba and sparkling wine, finished with shredded coconut. The Tim Tam™ Espresso Martini blends vodka, cold brew coffee, espresso, vanilla liqueur and chocolate syrup. For a non-alcoholic option, the Tim Tam™ Iced Vovo Mocktail pairs peach and raspberry purée with shredded coconut and soda.
Bringing together seasonal Australian flavours and a much-loved homegrown brand, the afternoon tea offers international visitors a taste of an Australian summer and locals a fresh take on familiar favourites.

The afternoon tea is priced from $115 per person and is served on Friday to Sunday, 1:00 pm–4:00 pm, excluding Christmas Day and New Year’s Day.
