This summer, Sydney Harbour will welcome Solaré, a three-level luxury superyacht that promises to redefine hospitality on the water. At 150 feet, Solaré isn’t just a yacht—it’s an immersive culinary experience that combines the lavish lifestyle of a superyacht and premium dining, with the relaxed, chic atmosphere of Mediterranean beach clubs. Set to launch in early summer 2025, Solaré invites guests to indulge in the ultimate waterfront escape, providing access to all through its multilevel offering and price points.
Cruising across Sydney’s iconic harbour, Solaré offers a slice of the Italian Riviera right in the heart of Sydney. With its design inspired by the timeless elegance of Italy’s most glamorous coastal regions, Solaré blends sophistication and laid-back luxury with three unique dining and hospitality experiences across three levels.
“In today’s fast-paced world, true luxury is having the time to slow down and enjoy amazing food and drinks with friends. Onboard Solaré, our motto for guests is ‘Let’s do less’. Time slows down, and the sunshine, sea breeze, and spectacular views provide the perfect escape from daily life. Solaré is a lifestyle-led concept inspired by European travels. I wanted to recreate that carefree feeling of relaxation and escapism, usually experienced only on holidays, and transport guests to their very own Mediterranean escape, right here on Australian shores,” said Solaré’s Founder Scott Robertson.
On the main deck, the sophisticated Dining Room welcomes guests to enjoy contemporary coastal Italian cuisine by Executive Chef Pablo Tordesillas (previously Executive Chef Ortiga, Brisbane, Head Chef Totti’s Bondi). With a focus on fresh, seasonal ingredients, the main deck serves as the centrepiece of Solaré, offering seasonal and produce focused tasting menu.
For those wanting to chart their own course, there is an array of luxurious snacks to start, including a caviar section and fruitti di mare, accompanied by a range of sides to enhance the set menu. Dishes may include
reginette with Balmain Bug and crustacean butter, bluefin tuna crudo with pink grapefruit, fennel pollen and olive and swordfish white beans, anchovy & oregano to transcend you to the coast of Italy. Per a standard restaurant model, bookings for The Dining Room’s two daily sittings across lunch and dinner, will be able to be made via seven rooms from January 2025.
Curated by Ed Loveday (previously co-owner of ACME, Bar Brosé & Creative Director of The Point Group), Solaré’s premium wine list focuses on refreshing Mediterranean varieties with an emphasis on crisp whites and lively rosés. Solare’s Signature Martini Service served by trolley tableside, crafted by local design studio Palomar Rowe, will stir up tailor made martinis, ranging a selection of premium vodka and gin, alongside garnishes, and house-made tinctures.
Solaré’s cocktail list blends the refined tradition of European aperitivo culture with beloved poolside classics, offering an array of refreshing spritzes, martinis, margaritas, daiquiris, and champagne-based cocktails. Seasonal cocktails incorporate in-house crafted infusions, syrups, and tinctures and celebrate seasonal fruit to compliment the Dining Room’s culinary direction.
Venture up to the Terrace on the middle deck which has been designed for effortless socialising, and experience a cocktail bar and à la carte snack program by Executive Chef Pablo Tordesillas that perfectly enhances the yacht’s laid-back atmosphere.
“Sydney is renowned for its incredible waterfront restaurants, but until now, no one has brought an exceptional dining experience onto the harbour. At the heart of Solaré is our dining room, where executive chef Pablo Tordesillas skilfully leads the way. Where else can you enjoy a long lunch, take in the full spectrum of harbour views, and then retreat to a daybed on our Sun Deck to soak up the sun? Traditionally, a superyacht experience has been relatively inaccessible to most. We wanted to change that narrative, to elevate the experience while making it more accessible,” said Scott Robertson.
Guests looking to experience a luxurious beach club on the harbour can apply to experience the members only top-level Sun Deck, where groups can book custom-designed daybeds and booths, creating a sense of Mediterranean escape while floating on Sydney’s pristine waters. Sip expertly crafted cocktails, including playful interpretations with freshly released Don Julio’s 1942 Rosado, and enjoy classic laid-back ‘beach club’ favourites such as a Balmain bug roll or a plate of fritto misto while taking in stunning panoramic views of the harbour.
The three distinct levels of interiors which have been expertly envisioned by Alex Zabotto-Bentley of AZB Creative, have been designed around opulence and Mediterranean warmth. “From the vibrant burnt orange and sunflower yellow tones that nod to the colours synonymous with the Summer of 1974 on the sun deck, to the custom-made hardwood teak furniture and luxurious materials including solid green onyx in the dining room, every detail onboard evokes the feeling of a glamorous, sun-soaked escape”.
“The yacht’s classic styling, combined with bespoke elements, evokes the essence of Italy’s most iconic coastal regions, effortlessly blending nostalgia with contemporary luxury. “The textural fabrics are Italian, the uniforms are reminiscent of those found in bars in Venice…sparking the imagination,” continued Zabotto-Bentley.
