Launching on 1st October 2024, the resort has introduced new menu and new culinary experiences across all its dining venues from breakfast to dinner, including a wellness-recipe Chiva-Som Siam Steamboat and a Pescatarian menu in the serene ambience of the Emerald Room, along with a new selection of breakfast, lunch and dinner menu and a Traditional Arabic and Islamic Medicine-inspired menu from its sister Zulal Wellness Resort, Qatar in Taste of Siam, its signature beachfront restaurant.

CHIVA-SOM SIAM STEAMBOAT
The Chiva-Som Siam Steamboat at The Emerald restaurant is an extraordinary culinary experience that re-envisions traditional cuisine with a healthy twist. A traditional stream pot is a hearty, steaming pot of fresh ingredients for sharing between friends and family. In its wellness-inspired evolution, the Chiva-Som Siam Steamboat offers smaller, nutrient-dense portions for individuals and in a more intimate two-person setting. This exquisite nutritious dish features a fragrant soup made from Hua Hin’s pure coconut water, celebrating for its natural sweetness and refreshing quality. Fresh vegetables, lean premium proteins, and fragrant herbs simmer over an open flame, releasing their natural flavours while preserving their nutritional integrity. The Siam Steamboat is accompanied by signature dipping sauces that blend traditional flavours with local ingredients and creative preparation, offering a nourishing twist on a classic favourite.

PESCATARIAN MENU
The resort’s new Pescatarian menu at the Emerald Room restaurant is another exciting and vibrant addition to its wellness fine-dining experience. This menu blends taste, nutrition, and sustainability, featuring seasonal and ethically sourced fish and seafood, alongside plant-based ingredients from our organic garden.
Featuring hot soups such as lobster bisque and crab miso, lean starters such as tuna ceviche and Cajun-spiced prawn with pomelo salad and mains such as oven-baked snow fish, roasted kingfish in a citrus sauce and grilled lobster tails, Chiva-Som Hua Hin’s pescatarian dishes are a celebration of wellness with seafood-rich benefits coming together with nutrient-dense vegetables in a medley of flavour and vitality. Each dish balances lean proteins, heart-healthy omega-3s, and essential vitamins, allowing guests to feel lighter and more balanced.

TAIM-INSPIRED MENU FROM ZULAL WELLNESS RESORT BY CHIVA-SOM
Taste of Siam, the much-loved beachfront restaurant, presents a new dinner menu featuring timeless classics, East Asian specialties, and seasonal delights. To cater to diverse tastes, the dinner menu also includes a selection of signature dishes inspired by the Traditional Islamic and Arabic Medicine (TAIM) traditions of its sister resort, Zulal Wellness Resort by Chiva-Som in Qatar.
TAIM draws on the rich heritage of ancient holistic health practices rooted in Arabic and Islamic traditions. Food as a key element in supporting wellbeing in this practice has been modernised and presented at Zulal Wellness Resort. Sharing a commitment to your wellbeing, the food here consists of nutritious ingredients to support the mind, body and spirit.
Featured TAIM-inspired dishes include roasted lamb rack served with herbal tahini and spiced baked cauliflower; turmeric hummus – Middle Eastern dips, Chickpea, tahini Turmeric with cruciferous and pomegranate; turmeric and ginger soup; date and honey saffron cake and mujadara, a signature dish of lentils and rice topped with crispy onions; a Fattoush salad, spicy herb sauce and coconut yoghurt.

REFRESHED TASTE OF SIAM MENU
Adding more variety for guests, Chiva-Som Hua Hin also refreshes its breakfast, lunch and dinner menu. The new chef’s selection features all-time-favourite as well as new creations. The menu continues to emphasise nourishing, wholesome ingredients, featuring an array of vibrant dishes that celebrate local flavours and seasonal produce such as poached egg on avocado and cauliflower hash browns, topped with Ayurvedic powder in the morning.
In the evening, guests can enjoy a variety of culinary delights, including their favorite dishes and new additions to the menu. Some of the exciting new options include baked salmon fillet with ivy gourd, glazed onion, and a tangy gravy; herb-crusted lamb served with mashed cruciferous vegetables, a balsamic reduction gravy, and glazed carrots; and East-Asian delights such as gỏi cuốn (fresh spring rolls) with prawn or tofu. For a truly unique experience, try the crab miso, a kombu seaweed broth infused with organic miso paste and served with crab meat.
