Cunard has revealed exciting details about its highly anticipated Great Australian Culinary Voyage featuring an incredible lineup of the nation’s culinary elite including Matt Moran, Nornie Bero, Darren Purchese and Julie Goodwin.
Setting sail from Sydney on 6 February 2025, this extraordinary voyage promises exceptional dining experiences, showcasing creativity, elegance, and flavours designed to captivate even the most discerning food enthusiasts.

Exclusive new dishes from Matt Moran
Renowned Australian chef Matt Moran will take over Queen Elizabeth’s dining venue, The Verandah, with an exceptional six-course degustation menu.
“I’ve curated a special degustation menu to serve on the luxurious Queen Elizabeth featuring a selection of popular Aria classics alongside new creations including a delicate crab with cucumber, buttermilk, and caviar, a beautiful coral trout accompanied by tomato, saffron, and mussels and a dry-aged Maremma duck paired with cherry, beetroot, and radicchio. I can’t wait to get back on board in February 2025,” said Matt Moran.
Indigenous cuisine from Nornie Bero
Leading Indigenous chef and owner of Melbourne’s Big Esso by Mabu Mabu, Nornie Bero, will delight guests with native dishes inspired by her island home in the Torres Strait.
At the Lido Alternative Dining restaurant, she will present unique creations such as hibiscus scallop namas with sea grapes; native five-spice spatchcock with wild tamarind, warrigal green cream and macadamia dukkah; and strawberry gum and bunya nut tiramisu.
Pastry delights from Darren Purchese
Melbourne’s pastry maestro Darren Purchese returns for a third consecutive year, offering sweet masterpieces during Cunard’s Champagne Afternoon Tea.
His stunning dessert array includes creations showcased on Masterchef Australia, Dessert Masters, and the Great Australian Bake Off, such as glazed cherry blossom cheesecake with crunchy base and miso caramel; lemon toast with banana, passion fruit and avocado; and chocolate pastry with chocolate cream filling, chocolate glaze and candied cocoa nib.
All three chefs will also curate special dishes for guests to enjoy during dinner at the Britannia Restaurant.
