Photo Credit Enjoy HotelsFor the second consecutive year, El Mangroove, Autograph Collection—located within the Blue Zone of Costa Rica’s Nicoya Peninsula on the Gulf of Papagayo—will host the second edition of the Sustainable Gastronomic Congress on September 27 and 28th, 2024. Created by Enjoy Hotels, pioneers in sustainable gastronomy, the two-day congress is the only symposium in Costa Rica to host a roster of world-renowned chefs from Michelin-starred restaurants. This year, the forum will include celebrity chef, author and influencer Inés Páez Nin (also known as Chef Tita), Ambassador of the New Dominican Cuisine and the first Dominican chef selected as a judge on the cooking competition TV show Top Chef VIP 2024 on Telemundo.

Under the direction of Randy Siles, Enjoy Hotels’ Culinary Director and the 2024 Ambassador of Esencial Costa Rica, the country’s national brand, the Sustainable Gastronomic Congress will feature a line-up of speakers including:

  • Israel Ramos, chef and owner of the Michelin-star restaurant Mantúa in Cádiz, Spain.
  • Kisko García, chef and owner of the Michelin-star restaurant Choco in Córdoba, Spain.
  • Benito Gómez, chef and owner of the two Michelin-star restaurant Bardal in Ronda, Málaga, Spain.
  • Ramsés González, chef and owner of the Michelin-star restaurant CanCook in Zaragoza, Spain.
  • Mitsutaka Kawata, chef and owner of Sun Taka in Barcelona, Spain.
  • Inés Páez Nin (also known as Chef Tita), Ambassador of the New Dominican Cuisine and author of the book The New Dominican Cuisine; owner and chef of MoriSoñando and Aguají restaurants in the Dominican Republic, and judge on the cooking competition TV show Top Chef VIP 2024 on Telemundo.
  • Randy Siles, culinary director of Enjoy Hotels, Ambassador of Esencial Costa Rica, President of Les Toques Blanches in America, member of Disciples de Escoffier, and first Ambassador of the National Plan of Sustainable and Healthy Costa Rican Gastronomy.
The two-day event will feature two 8-course dinners: the first, on September 27th at Makoko restaurant, benefiting the Sonrisas Foundation, and a Gala Dinner on September 28th, hosted by the chefs at Malú restaurant. For event information, contact events@enjoyhotels.com.
