The StandardX, Melbourne is preparing to unveil BANG, its new signature all-day dining restaurant on August 8. Set to take Thai flavours centre stage, BANG will be led by Executive Chef Justin Dingle-Garciyya.
The bold menu has been crafted to unite people, drawing influence from Asian flavours to redefine Thai street food. It showcases a sophisticated fusion of culture and gastronomy, where traditional Thai recipes are transformed using local produce sourced from Melbourne and Victoria. Whether it’s a casual breakfast, a quick lunch, a post-work drink, or a celebratory dinner, BANG seamlessly weaves together the diverse culinary experiences from Dingle-Garciyya’s extensive travels.
On the flavourful lunch and dinner menu are hibachi pork and octopus skewers painted with a pinoy BBQ glaze alongside a charred pineapple nam jim dipping sauce; “Cracker” Southern bluefin tuna with a ginger-turmeric spread; blue swimmer crab Pa Tong Ko donuts; slow cooked Wagyu beef short rib accompanied by a Warrigal salad with ginger, coffee and coconut; and Ku-Otway free range double-cooked pig’s head with pickles, jams, relishes and roti.
BANG’s drinks menu continues the Thai narrative in its flavours and thoughtful sourcing, with highlights including the “Dear Angie” – gin, lemongrass, fresh lime juice, Thai basil, simple syrup and fish sauce; “Khunpa” – berry compote, rose tea, gin, elderflower liqueur, lemon juice, mint leaves and Prosexy (a collaboration between The StandardX, Melbourne and Fin Wines); and “Pak Waan” – dark rum, honey, kaffir lime, mint, Thai basil and lemongrass.
Dingle-Garciyya’s journey is nothing short of exceptional, having developed his skills in Michelin-starred kitchens across Europe, including Le Manoir aux Quat’Saisons, Le Gavroche, and Can Fabes. He also served as Culinary Director and Executive Chef at prestigious hospitality brands such as Aman Resorts, Morgans Hotel Group, and Six Senses Resorts. Dingle-Garciyya’s extensive travels now bring him back to his native Melbourne, where he infuses international expertise into the flavours at BANG and The Roof. Throughout his seasonally-driven menus, he champions sustainability and locality by forging close relationships with farmers, winemakers, cheese makers, butchers, and bakers.

The StandardX food and beverage concepts will also include The Roof; a secret hideaway accessible exclusively to hotel guests with panoramic views of Fitzroy and Melbourne, offering a dining experience inspired by the melodic flavours of Mercado Medellin. Located in the lobby, The Box will feature a retail concept that includes everyday essentials, lifestyle items, as well as snacks and beverages to be enjoyed on-the-go or in room.
