Pillar Wellbeing and Jason Atherton are delighted to announce their partnership as Jason joins the Pillar Wellbeing team as Culinary Director, supporting the development and expansion of the company’s Pillar Kitchen outlets.

Launching its first and only UK outlet at Raffles London at The OWO – where the dedicated Pillar Kitchen restaurant is part of the new destination’s impressive culinary offering – this will be followed by a further opening at Fairmont Doha, and other locations where Pillar Wellbeing operates its wellbeing clubs.

In a first-of-its kind partnership between a 2 Michelin-starred chef and health & wellness brand, and heralding his first foray into wellness menu creation hoping to redefine chef-led healthy eating, Jason will be responsible for creating Pillar Kitchen’s quarterly menus – which aim to positively impact gut health and energy, as well as being deeply flavourful – whether guests are dropping in for a quick bite or as a part of their weekly routine. He will also be working with the Pillar team to expand the Pillar Kitchen offering and take the concept to new locations around the world.

As Jason says: “I believe that the future of food is changing rapidly. People are becoming increasingly aware of the need to take care of themselves with longer lifespan, and looking for nourishment throughout their daily routine from the moment they wake up. We’re using consciously sourced ingredients with natural health-giving properties and bringing them together to make something delicious, with dishes that if you ate them in any restaurant, you would want to come back – the bonus is that it’s healthy.”

Sample dishes at Pillar Kitchen include:

  • Jason’s morning porridge: oat and seed Bircher muesli with flaked coconut, raisins and Islington honey
  • Shakshouka with Lebanese tomato sauce, boiled hen’s egg, spinach, natural yoghurt, spring onion and coriander
  • Green gazpacho-marinated green vegetables with mint yoghurt and sprouting seeds
  • Avocado tikka with potato flatbread, jalapeno + spring onion salad.
  • Kelp noodles with chilled Shitake mushroom broth, roasted Shimeji mushrooms, coriander, and ginger
  • Whipped coconut pannacotta with berries and olive oil
  • High energy brownies

Jason’s menus will be available at Pillar Kitchen at Raffles London at The OWO from 15th January 2024.
