Restaurateur and entrepreneur, Maurice Terzini and experienced drinks expert Joe Jones partner to launch a new endeavour, Purple Pit. Opening in early December, the basement cocktail bar will create an authentic disruption to Melbourne’s bar scene.
Inspired by great European hotel bars, the collaboration of Purple Pit promises a unique and memorable experience, blending Jones’ bartending skills with Terzini’s expertise. The cocktail bar will be intimate & romantic located beneath the iconic Gothic Queens and Collins building.
If familiar with Jones previous works, Purple Pit will follow suit to the last ten years with a tailored menu of euro-centric modern cocktails and classic interpretations.
Highlights will include “Ticket To Ride”, a half martini served straight from the freezer with a 90ml Champagne serve, accompanied by a spoonful of Caviar atop a burst of Kochu Creme fraiche. The cocktail is served as a set on a silver tray and a strongly suggested cold open to your time at the Pit.
The food menu has been described by Terzini and Jones as “Champagne food”, things you want to eat when drinking with a focus on aperitivo and late-night indulgence .
Hero dishes include in-house made Calzone with alternating fillings, Tomato Tartare brushed in shio koki to develop a texture closer to dry aged beef, and Tuna Loin with bright, sour, acidic and spicy notes demanding to be paired with a Martini.
For the design and interiors, Terzini and Jones collaborated with Daniel Dalla Riva & Filip Bjazevic of Latitude Group and Studio Massive to create a contrast between brutalism & overt lux textures.
The music programming will launch in early 2024 and feature a mix of acoustic and electronic based live performances, with Martini & Techno and Jazz & Pinot nights.
Purple Pit will launch early December on the corner of Queens and Collins street.
