Led by Bar Manager, Conor Gavin, hailing from Ireland with a wealth of international expertise, the talented bar team crafts signature shared punchbowl cocktails and all the timeless classics prepared with premium global spirits. Non-alcoholic cocktails made in collaboration with local distillery Seadrift are also available, alongside a diverse selection of local and imported wines and beers.
Sunset Hour truly comes alive at PIER BAR, transforming evenings into an iconic sun-soaked Sydney Happy Hour, with $12 cocktails and $2 oyster specials from 5 pm to 6 pm weekdays, perfectly complementing unobstructed sunset views.
