Tides Restaurant & Bar, at Club Wyndham Airlie Beach Whitsundays, is set to launch a series of fine dining events with its first-ever degustation evening in October.

The menu promises to take diners on a culinary journey across five courses. Dishes like Japanese sea scallops with coconut labneh, kiwi salsa, homemade chilli jam, and saffron prawn risotto with mascarpone cheese and fresh herbs are creative spins on traditional foodie favourites. The evening has a strong emphasis on Australian produce, starting with freshly shucked Coffin Bay oysters and utilising a tender Australian Black Angus fillet – accompanied with red wine jus, charred broccolini and black garlic and truffle mash – as the star dish.

The five courses are expertly paired with wines from the world’s best-growing regions: Reims and Burgundy in France, Marlborough in New Zealand, and Australia’s Hunter and Barossa Valleys.

“Our degustation night is a new venture for our restaurant and resort, and a unique offering for locals and travellers to Airlie Beach. Our team at Tides Restaurant & Bar is excited to take resort guests and locals on this inspiring culinary journey,” said David Smith, General Manager of Club Wyndham Airlie Beach.

“The night has given our long-serving chef, Matt MacCullum, the opportunity to unleash his creative genius, and we know diners will appreciate the mouth-watering dishes he will plate up alongside wine pairings from William Gallagher, our recently appointed Restaurant Manager. Our commanding views of the Whitsunday Passage provide the perfect backdrop for this evening of fine dining,” he added.

The degustation event will be held on Saturday, October 14, beginning at 6.30 pm. The meal costs $150 per person or $195 per person with wine pairings. Places are limited and are expected to sell quickly, so bookings are essential. Interested locals can express their interest by calling 4962 5000 or emailing reception.airliebeach@wyn.com. The resort is part of the portfolio of Club Wyndham South Pacific, a leading holiday club within the Asia Pacific region, and club members either staying or living locally are eligible for a 15 per cent discount.

Following the October event, Tides Restaurant & Bar intends to hold a degustation event monthly. Diners who want to order la carte at the restaurant can still dine during these evenings.

Tides Restaurant & Bar’s bistro-style a la carte menu offers contemporary fare, including eye fillet, rack of lamb and beer battered barramundi, emphasising Australian-sourced produce – particularly seafood – and delivering value for money.

Club Wyndham Airlie Beach offers spacious and luxurious accommodations – including Presidential Suites – overlooking the Whitsunday Passage and features an onsite gym and a swimming pool with incredible views. It caters to resort guests and Club Wyndham South Pacific members as one of the 52 properties across ten countries in the holiday club’s portfolio.
