Chef-owner Hiroki returns to Hong Kong with a new omakase inspired by his travels, inviting his guests to experience a new culinary journey around the world available from now until the end of the year.
An avid global explorer filled with curiosity, Hiroki-san constantly loves to surprise his guests with new ingredients, tastes and ideas. While individual dishes have appeared on previous menus, this summer marks the first time that he has created a complete journey of international ingredients with a completely new artisanal omakase that transcends traditions. The menu comes at a time Hiroki-san shares the heightened food concerns from his guests, offering a globally-inspired selection with traditional Japanese craftsmanship. Some of these ingredients such as the Spanish tuna, which features as sushi on Hiroki’s menu have also found their way onto some of the finest tables in Japan, prized for their flavour and texture.
The Sushiyoshi Global Footprints Menu that brings together his favourite ingredients from Europe, South East Asia and Greater China in a symphonic omakase which highlights their freshness and provenance. His passion has taken him to learn with other Michelin starred chefs in France.
Hiroki-san said: “My passion has always been to expand the boundaries of what is seen as Japanese cuisine.The omakase format is ideal for this as it allows me to tell a story and take diners on my personal journey. They will discover the same ingredients I’ve found and they will taste the possibilities I have created as an artisan. I hope they will be as surprised and excited as I am.”
Highlights of the new 16-course omakase featuring Hiroki’s hallmark creativity include Canadian Geoduck served with Kombu Foam, Coral Crab with Crab Soup Vinegar Jelly, Dibba Bay Oysters from the Dubai’s Fujairah balanced with Lime Jelly and Homemade Caviar, and Uni Somen featuring uni from the crystal clear waters of the Bohai Sea. The omakase finishes on a palate cleansing fresh note of seasonal Peach Jelly with home made Vanilla Ice Cream.
