JW Marriott Gold Coast Resort & Spa’s annual Culinary Stars Showcase returns for its second year from 4 – 7 September 2023. Led by Executive Chef Paul Smart, this remarkable culinary event is host to a celebration of exquisite flavours and artistic creations that brings together culinary credentials from around the globe. Finding its home once again at Citrique, awarded an Australian Good Food Guide Hat 2023, get ready to witness JW Marriott Gold Coast’s Culinary Masters in action as they present four locally inspired culinary events across four unforgettable days.

From JW culinary classes to decadent degustation dinners, the award-winning local culinary team and distinguished international guest chefs with a combined 4 Michelin Stars, will showcase their expertise in crafting distinctive dishes using the finest local Queensland produce, paired with Laurent-Perrier Champagne and Gathered Wines.

With a commitment to sourcing the freshest local ingredients from across Australia, JW Marriott will host an exceptional line up of international chefs alongside the talented JW Marriott Gold Coast team led by Executive Chef, Paul Smart including:

  • Vanessa Huang – Chef-owner of Ephernite Taipei, Taiwan
  • Alain Caron – Chef of Caron, Master Chef Judge, Amsterdam
  • Aurelien Houguet – Executive Chef, Movenpick Hotel, Asia
  • Patrick Jeffroy – Two Michelin Star Chef, L’Hôtel de Carantec, France
  • Jacques Pourcel – Two Michelin Star Chef, Le Jardin des Sens Restaurant, France
  • Richard Le Deunff – Chef Pâtissier Co-Owner and Founder, Aux Fines Bouches, Burleigh Heads

Paul Smart’s culinary expertise from his years abroad at the likes of Sofitel Legend Metropole Hanoi, The Ritz London and cooking for Her Royal Highness, Queen Elizabeth II has led to a fusion of creativity seen throughout the elevated food and beverage venues across the JW Marriott Gold Coast including signature dining restaurant Citrique.

Smart is committed to promoting Australian produce and cultivating fresh and exciting offerings for hotel guests and local diners.

Each dinner has its own concept and story, taking guests on an exquisite journey that spans the NSW hinterland, Queensland border and surrounding ocean.

Indulge in a six-course degustation paired with Gathered Wines. Enjoy King Fish, Scallop, Snow Fish, Duck Breast, Lamb, and to finish Quince.
