Sun Siyam Resorts, Maldives

Sun Siyam Resort’s restaurants offer freshly caught and farmed local dishes like grilled fish (Fihunu Mas) or Boashi Hikikoh, prepared by Chef Ahmed Ali on Sun Siyam Vilu Reef – or the fish curry created by Chef Ashan Madusanka at Islander’s Grill, one of the 14 restaurants (and bars) on Sun Siyam Iru Fushi.

The fish used in these dishes are sustainable species which come directly from the fishermen living on the neighboring islands, also supported by Sun Siyam Resorts as part of Sun Siyam Cares, their sustainable commitment to the people and community of the Maldives. Coconuts, pandan leaves (an evergreen palm with a vanilla, nutty flavor) and most of the spices that are used are planted and harvested directly at the farm islands which belong to Sun Siyam Resorts. These spices are also the basic ingredients for delicious cocktail creations by sommelier and beverage manager Kusal Ashen from the “No Mistake Bar” on Sun Siyam Iru Fushi.
