The Star Sydney is turning up the glitz and glamour for the end of 2022 with a range of gourmet fine dining offers from
the entertainment precinct’s best Executive Chefs.
From a luxurious three-course meal at BLACK Bar & Grill and a celebratory seafood feast at Flying Fish, to a premium
set menu of Italian delicacies at Cucina Porto and a selection of special menu items at Sokyo, The Star Sydney is the
only place to be this year to celebrate New Year’s Eve.

Those looking to celebrate New Year’s Eve in opulence will need to look no further as The Star’s signature steakhouse
serves up a gourmet five-course meal beginning with entrées to share of scampi tartare with caviar, and spanner crab
salad with crispy brik pastry. Next up, a decadent kingfish sashimi with watermelon, mint and fetta, charcoal grilled whole
lobster with wakame butter and charred onion and a wood grilled MBS 9+ striploin wagyu with asparagus, parsley,
mushroom marmalade and beef jus. To top it all off, a succulent rice pudding with coconut, passion fruit and mango
sorbet awaits and the option for a two-hour beverage package to fill your night with bubbles.
Flying Fish

It’s a toast to new beginnings as Executive Chef Adam Hall welcomes in the new year for the first time at Flying Fish,
inviting guests to enjoy some of Sydney’s best seafood beginning with a selection of rock oysters, Shark Bay scallops
with cultured cream and pickled desert lime and Jervis Bay mussels to share. Other key highlights include the grilled
king prawns with oxheart tomato and blood line, Bay lobster tortellini with sweet corn and shellfish butter and Spring
Creek barramundi with sugarloaf cabbage and lemon aspen. Those looking to satisfy their sweet tooth will be pleased
to end with roasted strawberries with honey custard and sheep’s milk yoghurt sorbet, mango parfait with lemon myrtle
cream and torched meringue or a blood plum pudding with wattle seed caramel and gingerbread ice cream.
Cucina Porto
Premium five-course set menu | $125pp
Cucina Porto will be transporting guests through their tastebuds with a premium five-course set menu on the cards.
Guests will be invited to pair their glasses of sparkling with an aperitivo of market oysters served with shallots and
cabernet vinegar, before digging into an inviting selection of antipasti including stone-baked bread with olive tapenade,
vodka and citrus cured salmon with minutina salad, ox heart tomato and burrata, and bresaola salad with goat’s curd.
The pasta course includes two brand new dishes to Cucina Porto’s menu: fennel sausage ragu with Juncu pecorino
and gnocchetti with pesto and green beans. For mains, there is a grilled beef scotch filet tagliata, and guazzetto di
mare with mussels, prawns and market fish accompanied by sides of crispy duck fat chips and a mixed salad with
Chardonnay dressing. For an extra indulgent end to the meal, Executive Chef Martino Pulito will also be serving up a
sweet Italian Pandoro millefeuille for dessert with mixed berry, mascarpone, and chocolate cream.
Sokyo

Sokyo Executive Chef Chase Kojima and his team have created three special dishes to see out 2022 using only
the freshest seasonal ingredients that are sure to create a very special occasion for you and your family. From an
incredible lobster sashimi platter with twelve kinds of fish and a whole 1kg lobster to share and a melt-in-your-mouth
lamb galbi with ssam lettuce to a creamy King George Whiting with caviar beurre blanc, Chef Kojima’s menu is a ode to Sydney’s best summer produce.
