Helmed by Culinary Director Richard Ekkebus, the two-Michelin-starred contemporary French restaurant Amber has been leading the charge for a cleaner, safer, more equitable food system, with its efforts in sustainability being recognized both locally and internationally.

Realising the fact that food accounts for 25-30% of greenhouse gas emissions, while livestock production alone accounts for 15% of all greenhouse gas emissions, Amber makes its menu less meat-centric with a constant aim to keep a 35:65 ratio between animal protein and plant-based ingredients in order to reduce the overall environmental impact. It resonates with the growing number of diners who believe that a good meal doesn’t require meat. In this month, Amber has launched a refreshing plant-based menu, highlighting Violin Zucchini and White Asparagus of which the innate flavours and nourishment are celebrated through a foundation of French technique.
