 In celebration of Mexico’s widely recognized upcoming national holidays, Canopy by Hilton Cancun | La Isla is delighted to unveil an exciting lineup of new heritage inspired gourmet offerings and activities taking place this fall season.

Each new activity is designed to teach guests and participants the many culinary traditions of Mexico, with a special focus on those associated with the country’s most popular fall holidays, including Mexican Independence Day and Day of the Dead.

Led by the hotel’s Executive Chef Adrian Gerboles and Guillermo Dejorge and their recognized gourmet team, Canopy by Hilton Cancun La Isla will be holding three cannot miss culinary events where patrons will not only learn firsthand expert cooking and baking skills, but discover the intricate history of the country’s past through the power of food. Canopy by Hilton Cancun La Isla is also very excited to launch its Juicery at Wander Rooftop, offering a selection of health-conscious smoothies and brunch classics, as well as announce the return of its very special Evening Tastings, where guests can interact and discover the neighborhood through tastings from local vendors. Below are full details on what guests can expect this fall season at Canopy by Hilton Cancun La Isla, one of the city’s newest urban sanctuaries.

Culinary Activations and Events

This month, on September 25th, Canopy by Hilton Cancun La Isla will be hosting a live stream event called Libera Tu Paladar, which translates to “free your palate.” The event, open to locals, will teach guests how to make one of the most popular Mexican Independence Day dishes, Chile en Nogada, from the comfort of their own kitchen. During this event, Executive Chef Guillermo Dejorge will walk guests through the steps involved to make this wonderful dish while explaining the history behind its significance. Participants will receive their very own custom box with all the necessary ingredients and tools to cook this dish for two.

Taking place on October 22nd, Executive Chef Guillermo Dejorge will once again lead a culturally inspired Pizza Cooking Lesson where guests will learn how to recreate ancient Italian recipes with a local Mexican flare. During this interactive session attendees will have the opportunity to learn how to prepare their own personal pizza while incorporating local neighborhood flavors and ingredients.

Canopy by Hilton Cancun La Isla’s final festive culinary class called, Day of the Dead Celebration with Pan de Muerto, will take place November 6th in celebration of Day of the Dead. Made only once a year for this coveted holiday, guests have the unique ability to learn how to cook, decorate, and properly present this popular Mexican pastry, along with the very special meanings behind each ingredient.

New and Returning Gourmet Offerings

Canopy by Hilton Cancun La Isla is thrilled to introduce the Juicery at Wander Rooftop designed to offer guests a delicious and healthy ways to start their day. Available now at the hotel’s stunning rooftop sanctuary the Juicery at Wander Rooftop provides guests with a selection of smoothies and brunch classics every morning from 7:00 a.m. to 10:00 a.m. Guests are encouraged incorporate a meal or smoothies from the Juicery, either before or after a yoga class, workout at the fitness center, or swim in the rooftop infinity pool.

Canopy by Hilton Cancun La Isla is thrilled to reintroduce their Evening Tasting events. Taking place from 6:00 p.m. to 7:00 p.m. on Mondays and Fridays at Azulinda Café & Bar, the hotel will showcase different local artisanal beer, wine, tequila and mezcal brands. During these social moments designed to bring guests together, participants can discover the neighborhood and what makes Cancun so special through their experience with local concoctions and conversations.
