Park Hyatt Melbourne launches ‘Hyatt Loves Local’ a global initiative to support and collaborate with small local businesses impacted by COVID-19 and has partnered with Santiago Cuyugan, winner of Savour Patissier of the Year (2017) and owner of Mamé Cocoa, to create a new Winter Afternoon Tea that is certain to enchant all diners.
After creating many confections at prominent establishments such Adriano Zumbo’s Patisserie, Savour Patisserie and Chocolate School, South Melbourne’s artisanal shop Bibelot, Santiago Cuyugan has joined Park Hyatt Melbourne as a Chef Pâtissier in Residence, bringing his culinary talent and his own story to Park Hyatt Melbourne.
“The opportunity to be part of ‘Hyatt Loves Local’ initiative and to be Park Hyatt Melbourne’s Chef Pâtissier in Residence enables me to showcase seasonal flavours whilst working with local producers.” said Santiago Cuyugan.
In collaboration with some of the finest Victorian producers, Santiago has created bespoke cakes inspired by classical French pastries. Plated delights pay homage to Melbourne’s coffee culture, seasonal winter fruits to take diners on a culinary journey.
Winter Afternoon Tea is perfectly finished off with freshly baked fruit and plain scones served with a selection of local preserves and decadent cream.
