From 12 May to 11 June, Raffles Courtyard is pleased to announce the next installment of its Private Chef Series with food writer Annette Tan, who is the chef behind private dining establishment, FatFuku, following the resounding success of the series’ debut last month.
Annette’s culinary repertoire is rooted in traditional Peranakan family recipes and parsed in modern cooking techniques to suit the times. Since Annette started FatFuku in 2017, she has cooked in collaboration with several restaurants, where she showcased her unique spin on traditional Peranakan dishes to sell-out sessions.
Indulge in a lavish spread of Annette’s signature dishes, including Nasi Lemak Buah Keluak, featuring buah keluak sambal, enriched with minced prawns and pork for sweetness and depth, served atop a mound of fragrant nasi lemak and steamed in a banana leaf package with a side of refreshingly tangy achar. Savour the Mee Siam Rosti, a new rendition of her signature crispy mee siam, presenting crisp and fluffy potato pancakes topped with prawn and quail egg sambal, drizzled with a Nonya-style mee siam gravy. Cap off the meal with divine sweet treats, such as Pandan Kueh Koh Swee; meltingly tender squares of kueh suffused with natural pandan juice and coconut, and the Roasted Banana Ice Cream with Gula Melaka Syrup, made from caramelised bananas roasted with pure cane sugar, giving it a depth and richness of flavour reminiscent of fried banana fritters.
The collaborative menu will be available at the lush, alfresco setting of Raffles Courtyard daily from 12 May to 11 June, 3:00pm to 9.00pm. Exclusively on Wednesdays and Thursdays, from 6:00pm to 8:00pm, guests will also have the opportunity to meet and mingle with Annette, the culinary talent behind FatFuku.
A selection of Raffles Courtyard’s own delectable signatures, including Southeast Asian small plates and authentic Singaporean delights, will be served daily, alongside beloved specialities prepared by the private chefs. Choose from among Raffles Courtyard’s curated selection of thirst-quenching mocktails, refreshing cocktails, spirits, beers and wines to accompany these coveted culinary creations.
The culinary collaborative series will continue to delight guests in the next few months with its exciting line-up of outstanding homegrown culinary talents featuring the best private dining concepts in Singapore. Expect to experience self-taught cook Shen Tan of Ownself Make Chef’s exploratory menu of Singaporean and Southeast Asian flavours; and an innovative menu inspired by the regional sojourns by Chef Sandra Sim of Lady Boss Dining Club – who is also the homegrown restauranteur behind former Cantonese tapas bar Sum Yi Tai and glitzy cocktail backroom Mona Lounge.
