Spread the love

From a home kitchen in Sydney’s south-west, I am cooking up two things I love: food that brings people together and a dream that refuses to stay on the back burner.

Welcome to Vera’s Pop-Up Restaurant & Premium Cakes in Carnes Hill. There is no secret recipe for why I started. I love cooking for family and friends. I love the smiles that come with a good meal. And I love that food can tell a story long before anyone picks up a fork.

Now, I want to share that joy with more people. My dishes draw on my Vietnamese heritage, my love of Asian flavours and my delight in making something special from scratch. The kitchen may be small, but my plans are not. Just ask the cake tins. They know how busy life can get.

Big flavours from a little Sydney kitchen

If you could visit my kitchen on a cooking day, you would soon see why I rarely do things by halves. My menu moves between lively Asian favourites and comforting homemade dishes. Each one has its place at the table.

Singapore chilli crab is one of my signature dishes. It is bold, messy in the best way, and made for people who don’t mind rolling up their sleeves. This is not a meal for anyone hoping to keep a white shirt spotless. The joy is in sharing it.

Then there is Vietnamese bánh xèo, a golden, crisp pancake that brings a lovely crunch to the plate. My lemongrass beef bún offers a different mood: fresh, fragrant and full of flavour. Pork and prawn spring rolls bring the sort of bite that makes it hard to stop at one. I have never believed a second spring roll needs an apology.

I also make homemade pasta. It might seem like a change of direction, but that is part of the fun. Good food should leave room for curiosity. A home kitchen can welcome more than one tradition, especially when every dish is prepared with care.

For me, cooking is not about chasing a trend. It is about using fresh ingredients, respecting the flavours I grew up with and finding new ways to share them. My Vietnamese heritage is a source of pride, and I want that feeling to come through in my food.

The cakes deserve their own applause

Of course, dinner is only half the story. I also make premium cakes, and I take dessert very seriously. Not in a stern, no-smiling sort of way. Quite the opposite. A beautiful cake should make people happy before the first slice is served.

My burnt Basque cheesecake has that wonderfully rustic look that makes perfection feel rather overrated. If you love something rich, pistachio cheesecake is the answer. Mango cake brings a bright, fruity option, while Biscoff butter cake steals the spotlight from the birthday candles.

These cakes are for celebrations, gifts, shared tables, and those perfectly good days when nobody needs an excuse for dessert. I make them at home with care, and I hope each one feels personal to the person who orders it.

It is a joy to think that something prepared in Carnes Hill can become part of a family birthday, a gathering with friends or a small moment worth marking. Those moments matter. They are why I keep reaching for the mixing bowl.

My next dream has three famous letters: MKR

Now for the big ambition. I want to compete on Australia’s My Kitchen Rules, better known as MKR. Not because I expect the judges to go easy on me. Quite the reverse. I want the chance to show what I can cook when the pressure is on, and the whole country is watching.

I would love to bring the flavours of my Vietnamese heritage to that table. I want to show that food cooked with heart can be exciting, generous and full of character. And I would love more Australians to discover dishes that have meant so much to me.

MKR, shown on Seven and 7plus, celebrates home cooks brave enough to put their menus and teamwork to the test. Watching that sort of challenge makes me dream bigger. I am hoping for my chance, not claiming a place in the line-up. It is a goal I am working towards, one dish and one order at a time.

Of course, there is plenty between a dream and a television kitchen. There is practice. There is patience. There is the challenge of getting everything onto the table while it is still hot. But I know how much this means to me, and I am ready to keep learning.

Every order brings the dream a little closer

To everyone who has ordered a meal or cake, passed my name to a friend or sent a kind message, thank you. Your support means more than a sale. It tells me that a passion born at home can grow into something with a life of its own.

I am proud to be building Vera’s Pop-Up Restaurant & Premium Cakes in Carnes Hill, in Sydney’s south-west. I want it to celebrate homemade cooking, Vietnamese flavours, and the simple pleasure of feeding people well.

Perhaps one day I will be standing in an MKR kitchen, hoping the judges love my chilli crab as much as I do. Until then, I have food to prepare, cake to bake, and a very full heart behind it all.

After all, good food brings people together. And sometimes, it gives a home cook the courage to dream out loud.
