 One MICHELIN-starred ESTRO will welcome Singapore’s celebrated Two-MICHELIN-starred Thevar (#37 on OAD 2026 Asia’s Top Restaurants + #58 on Asia’s 50 Best Restaurants Extended List) in Hong Kong for an exclusive two-night collaboration on 6 and 7 August 2026, with a 2nd event to be hosted at Thevar in Singapore on 6 and 7 September. Marking the first-ever collaboration between ESTRO and Thevar, the event brings together two chefs whose cuisines are deeply rooted in heritage while driven by a relentless pursuit of innovation.

For two dinners only, ESTRO’s Antimo Maria Merone and Chef Mano Thevar of Thevar will present a 100% collaborative 8-course tasting menu that explores the unexpected harmony between Italian and contemporary Indian flavours. Each course has been developed jointly by the two teams, combining ESTRO’s refined Neapolitan perspective with Thevar’s bold and highly personal interpretation of Indian cuisine.

Two Chefs, Two Cultures, One Shared Philosophy

Though their culinary backgrounds may appear worlds apart, Chef Antimo and Chef Mano share a remarkably similar approach to cooking. Both chefs draw inspiration from the food traditions they grew up with while embracing modern techniques and contemporary creativity.

For Chef Mano Thevar, that means drawing on memories of growing up in Penang and the bold, spice-driven cooking of his Indian background while incorporating the precision of modern European kitchens. His approach has earned Thevar two MICHELIN Stars, a place on Asia’s 50 Best Restaurants list, and three knives from The Best Chef Awards, recognising his place among the world’s leading chefs.

Chef Antimo’s cooking is deeply personal, shaped by memories of growing up in Naples and years spent cooking abroad. At ESTRO, those influences come together in dishes that are elegant yet instinctive, finding equal inspiration in Southern Italian cooking and the wider world beyond it.

Together, the two chefs present a menu that explores the natural connections between their cuisines, finding common ground through spice, acidity, texture and a shared appreciation for bold, expressive flavours.

A Collaborative Menu Where Italy Meets India

The evening begins with a playful series of collaborative snacks, including Carrot Pani PuriAmaebi Balchão Black Ink TartDosai and Bombay Chilli Cheese Potato Toast, each showcasing contributions from both kitchens.

The menu continues with dishes that weave together ingredients, techniques and flavours from both culinary traditions. Highlights include King Crab Rasam Panna Cotta, ESTRO’s signature panna cotta elevated with rasam and caviar; Spanish Octopus with Fermented Green Chilli Sabayon; and locally-sourced Pomfret fish accompanied by a fragrant Mappas sauce inspired by the coconut-rich curries of Southern India with calamansi lettuce.

Pasta courses further explore the meeting point between the two cuisines. Homemade Tagliolini with Sweet Potato Gravy introduces Indian spice profiles to handmade pasta, while Bottoni with Tandoori Butter Sauce, Matsutake Mushroom and Truffle combines ESTRO’s signature, seasonally-changing pasta with Thevar’s spice-driven sauces.

The savoury journey concludes with Lumina Lamb Rack accompanied by black garlic, parsnip purée, sorrel chutney and acar togayal, followed by a distinctive Biryani with Italian Spices, created exclusively with an Indian soul for this collaboration.

Dessert brings the two worlds together once again through a collaborative Lorenzini Melon creation, before concluding with petit fours including Cannoli with Payasam Cream.
