This November, immersive dining specialist InterDine brings 4 Elements to ANTI:DOTE, Fairmont Singapore, marking the experience’s Singapore debut following successful runs in Hong Kong and Edmonton, Canada. Launching on 4 November, the production invites guests into the fantastical Kingdom of Hoshena for a new adventure inspired by Earth, Fire, Water and Air.
Set within the same imaginative universe as Banquet of Hoshena, previously presented in Singapore, the experience combines theatrical storytelling, projection mapping and interactive challenges with a specially curated five-course menu.
The collaboration brings together InterDine’s creative storytelling with the culinary and mixology expertise of Fairmont Singapore. Working closely with InterDine’s creative team, Director of Culinary Nicholas Issel and ANTI:DOTE Head Mixologist Adonis Endozo Reyes have developed menus that form an integral part of the adventure, with each dish and cocktail designed to complement the unfolding story.

A Kingdom in Chaos, a Dinner Like No Other
The story unfolds in the Kingdom of Hoshena, a magical realm ruled by Queen Serena, where Earth, Fire, Water and Air have long existed in harmony. But when her mischievous sister Nyxara escapes from imprisonment, the balance is shattered, setting the stage for an extraordinary dining adventure.
Through animated characters, intricate tabletop projections and interactive challenges, diners become active participants in the unfolding story. As the four elements compete for control of the kingdom, each course introduces a new chapter, transforming the dining table into a different world and revealing unexpected surprises along the way.
Four Elements, One Culinary Journey
At 4 Elements, dinner becomes part of the story. For its Singapore debut, Nicholas Issel, Director of Culinary at Fairmont Singapore & Swissôtel The Stamford, has created a five-course menu inspired by the four elements, with each dish designed to complement the unfolding adventure.
The journey begins with a playful welcome of Parmesan and rosemary popcorn, followed by an amuse-bouche of dried beef, heirloom tomato and Queen olive, before Earth transforms the table into an edible garden. Guests discover petite vegetables, rainbow roots and fresh greens harvested from Fairmont Singapore’s rooftop aquaponics farm, served with heirloom carrot dressing.
Things heat up with Fire, featuring Wagyu beef fillet, potato espuma, truffle crunch and ANTI:DOTE’s steak sauce. A refreshing interlude of lemongrass elixir, guava fruit sorbet, lemongrass jelly and drunken plum then prepares the palate for Water, a celebration of the ocean featuring roast black cod, Hokkaido scallop, scallop cracker and XO fried rice.
Throughout the evening, unexpected surprises and theatrical effects blur the boundaries between dining and entertainment. From mysterious presentations to clouds of dry-ice mist, each course offers a new opportunity for discovery.
The adventure culminates with Air, bringing the journey to a theatrical close with a Grand Cru cocoa dessert featuring fruit orchard, woody vanilla cocoa fruit, almond sablé tart and fruit fluid gel, accompanied by an Earl Grey chocolate drink.
For those seeking an extra touch of indulgence, the Premium menu introduces luxurious additions including shaved black truffle and lobster tail. Vegetarian and children’s menus offer their own interpretations of the four elements, ensuring everyone can take part in the adventure.
A Cocktail for Every Element
Extending the experience beyond the plate, ANTI:DOTE’s Head Mixologist Adonis Endozo Reyes has created a bespoke four-cocktail flight (S$88++) inspired by Earth, Fire, Water and Air. Bringing nearly two decades of experience in Singapore’s cocktail scene, including Origin Bar and Raffles Hotel’s Long Bar, Adonis combines technical craft with a playful approach to storytelling and hospitality.
Drawing on ANTI:DOTE’s commitment to housemade ingredients, layered flavours and thoughtful presentation, each cocktail captures the character of its element. Earth brings together Código 1530 tequila, mezcal, cherry and blood orange, while Fire delivers a theatrical flourish with Jura 12 whisky, lemon myrtle, Moscato, sage and honey, finished with flames. Water explores smoky depths through Glenfiddich 12, almond milk, salted apple and peat smoke, while Air offers a lighter expression with cucumber-infused Bacardi white rum, berries and citrus, finished with edible air.
Together, the four creations showcase ANTI:DOTE’s inventive approach to mixology, bringing the elements to life through flavour, texture and theatrical presentation.
