sàat and GranMonte Vineyard and Winery come together for Terroir to Tart; a special collaboration that transforms the flavours and ingredients of Thailand’s wine country into desserts through the distinctive modern Japanese touch of Chef Saki Hoshino at sàat.

Launching on 3 October 2026 and available at sàat until 31 January 2027, Terroir to Tart explores GranMonte beyond the wine glass. Chef Saki works with different expressions of the vineyard, from GranMonte wine and grape juice to grape leaves, translating the terroir of Khao Yai, Thailand into a playful progression of sweet and savoury creations.

Rather than treating wine simply as an accompaniment, Terroir to Tart brings the vineyard itself into Chef Saki’s sàat dessert kitchen, exploring the grape and vine as ingredients in their own right. Saki’s ingenious creations for this collaboration play with an exotic twist of Japanese, Western, and Thai flavours. The collaboration aligns with sàats philosophy of working with local ingredients.

Together, the dishes explore GranMonte through wine, grape juice and grape leaves, with Chef Saki’s Japanese sensibility bringing precision, balance and an unexpected perspective to ingredients grown in Thailand.

The special menu features three creations developed with GranMonte ingredients:

Daily Raw Fish, Spring Chenin Blanc Jelly
Daily raw fish paired with seasonal fruit, GranMonte Spring Chenin Blanc jelly, toasted rice and chilli garlic oil, bringing the character of Thai wine directly onto the plate.

Grape Juice Coconut Cheesecake
Coconut cheesecake with grape jelly, candied peanut, reduced GranMonte grape juice, “Sam Kler” (สามเกลอ, or a mix of coriander root, garlic, pepper) and fried shallot crumble, finished with lemon basil oil.

GranMonte Grape Leaf Sorbet
GranMonte grape leaf sorbet with grilled grape leaf oil, rice wafer, grape leaf gel, miso caramel, mochi, fresh coconut and toasted rice, transforming an often-overlooked part of the vine into the centre of the dessert.

GranMonte Vineyards and Winery has spent more than two decades developing viticulture and winemaking in Khao Yai, working with the distinctive conditions of Thailand’s tropical wine-growing landscape. The result brings together Thai wine terroir and Japanese-inspired dessert craftsmanship.

Designed as an experience in its own right, Terroir to Tart gives guests a reason to make sàat their stop for an afternoon delight or next stop after dinner in the Bang Rak location (near Hua Lamphong).
