Coraline’s restaurant at Beau Rivage has released its summer menu, adding lighter dishes and new flavors to savor while keeping some of its customer favorites.

“Our goal was to create a menu that stays true to our Gulf seafood roots while ensuring there is something memorable for everyone at the table,” said Executive Chef Austin Dedeaux. “Whether you’re craving fresh seafood, a perfectly grilled steak, a flavorful chicken entrée, or a fresh seasonal watermelon salad, our summer menu delivers a great dining experience for every guest.

“The summer menu reflects Coraline’s commitment to quality ingredients, exceptional hospitality, and creating a welcoming destination for locals and visitors alike.”

Chef Austin added a watermelon salad to the menu, which features heirloom tomatoes, pickled radish, goat cheese and a calamansi gastrique to compressed watermelon for a refreshing starter salad. Still on the menu is a Salt Roasted Beet Salad, with seasonal citrus, whipped goat cheese, candied Louisiana pecans and a charred green onion vinaigrette.

Chef Austin has added a Smoked Pork Belly with a Cathead Mississippi Vodka Sauce, sweet corn puree’ and roasted corn relish to the summer appetizers.

In addition to Coraline’s seafood gumbo and crawfish bisque, Chef Austin has added Crab Mushroom Soup, featuring assorted mushrooms, blue crab, chives and oyster crackers to the rich, cream-based soup.

The signature dishes have kept seafood favorites and changed a few new dishes for summer, like the Blackened Atlantic Salmon with haricots verts, a lemon dill cream and fennel slaw. Or try the Lobster Thermidor, a Maine lobster served with a brandy cream and Gruyere cheese. Also new on the menu is a Courtbouillon – the fresh Gulf catch with blue crab, shrimp and tomatoes served over rice with French bread.

Those not looking for seafood can find plenty of options to tempt the palate, like a blackened stuffed chicken breast with whipped potatoes, boudin, a roasted corn relish and a fines herbes sauce, or a prime pork chop with an apple puree, roasted Brussels sprouts and herb butter. Then there’s the Blackened Ribeye, with roasted potatoes, broccolini and cowboy butter.

Finish off the meal with a dessert cocktail such as a Crème Broulee’ Martini or a Strawberry Shortcake Martini. Or something a little more decadent like a Brownie Sundae, a Banana Upside Down Cake, a Lemon Tart, Hummingbird Cheesecake Brulee’ or White Chocolate Bread Pudding.

Coraline’s is open Sunday, Monday and Thursday, 4:30 p.m. to 9:30 p.m. and Friday and Saturday, 4:30 p.m. to 10 p.m. Reservations can be made at Coraline’s.

Jia adds new entrees, desserts; introduces shareable sides

Decadent plates of sushi, comforting Pho, a spicy and delicious Banh Mi and more, the Pan-Asian flavors of Jia are sure to delight the palate.

This summer, new dishes have been added to the expansive menu without sacrificing the flavors that diners keep coming back for.

At the wok, try the Lemongrass Coconut Curry Mussels. The green-lipped mussels are cooked in a curry flavored with lemongrass and coconut milk for a sweet-citrusy bite that is sure to please.

In the entrees, the favorites that are a hallmark of Jia, like the salmon, ribeye and short ribs, are on the menu, but Chef Nattalie Henderson has added dishes sure to tempt.

“Our new menu features exciting additions, including Snapper Two Way, Curry Lemongrass Mussels, Tempura Lemongrass Frog Legs, and Baked Miso Butterfish,” said Henderson. “Each dish offers a unique combination of bold flavors, fresh ingredients, and refined culinary techniques, giving guests an opportunity to experience something both familiar and unexpected.”

The butterfish is cooked with white miso, mirin, sake and a sugar marinade for a slightly sweet, umami flavor that complements the buttery taste of the fish.

Tender frogs legs are quick fried in a lemongrass tempura for an earthy, sweet flavor with a hit of citrus from the lemongrass, served with a lemongrass cream sauce and sweet potato straws.

The snapper is fried with salt and pepper and honey-glazed eel and served with Dynamite Sauce.

Jia also is introducing two shareable sides that are enough for the table.

“We are thrilled to introduce several new shareable dishes, like the Kung Pao Brussel Sprouts and Chili Crisp Green Beans, for those who enjoy family-style dining,” said General Manager Laura Schurb.

New desserts also dot the menu, all prepared by Executive Pastry Chef Amanda Owen.

Among the offerings to tempt diners are Dum Sum Donuts and Yuzu Crème Brulé, flavored with the tart, floral notes of Yuzu, a Japanese citrus, and served with fresh blueberries.

Sakura Cheesecake is served tableside. Then there is the Passion Fruit and White Chocolate Milk Custard.

Japanese whiskeys are highlighted in the Japanese Chocolate Whiskey Cake, served with whiskey-soaked tangerines and cherries.

Jia is open Wednesday, Thursday and Sunday from 4:30 p.m. to 9:30 p.m. and Friday and Saturday from 4:30 p.m. to 10 p.m. In addition, the Noodle and Sushi bars are open for lunch 12 p.m. to 4 p.m. on Saturday and Sunday. Reservations can be made at Jia.

Enjoy the taste of South America in August at the Global Buffet

The Buffet at Beau Rivage is celebrating tastes from around the world all year with featured dishes that highlight a different country each month.

Called Global Cuisine, The Buffet culinary team is creating dishes that will transport diners to the featured country. Each month, nine dishes—including a dessert—will be added to the more than 200 items normally found on The Buffet. The Global Cuisine items will be served at lunch and dinner daily.

August goes South American with:

Looking for a place to relax and unwind? Look no further than the LUX Lounge on the retail promenade at Beau Rivage.

The Roasted Bean, Beau Rivage’s signature coffee bistro, offers a full range of coffee drinks as well as sweets and sandwiches for a quick bite or just to relax and unwind.

The Roasted Bean’s coffee is roasted on site for the freshest coffee around and has bags available for purchase in the bistro.

In addition to sandwiches, burgers, paninis, salads and pastries, The Roasted Bean offers featured drinks, a featured cookie and its irresistible pound cake.

In August, try a strawberry coconut Redbull spritzer or a chocolate malt shake. If you’ve got the urge for a sweet treat, try the Biscoff cookie that’s featured this month, or the iced strawberry pound cake, sold by the slice or whole.

The Daiquiri Shop, located in the retail promenade across from The Roasted Bean, offers cool beverages, a wide selection of Grab & Go menu items and a menu of Mexican-inspired cuisine including empanadas, nachos and sandwiches.
