This summer, Sant Ambroeus Paris invites guests to experience the season through the lens of Milanese hospitality. Following its highly anticipated opening in Saint-Germain-des-Prés in December 2025, the beloved Italian institution enters its first Parisian summer, bringing together all-day dining, aperitivo culture, outdoor terrace seating, and a collection of new seasonal offerings that capture the effortless elegance of summer in the city. Founded in Milan in 1936, Sant Ambroeus has spent nearly ninety years cultivating a distinct approach to hospitality – one defined by ritual, warmth, craftsmanship, and understated sophistication.
Located on Rue Saint-Benoît in the heart of Saint-Germain-des-Prés, Sant Ambroeus Paris was conceived as a modern salon for both Parisians and visitors alike. Designed by renowned architect Fabrizio Casiraghi, the space blends Milanese heritage with Parisian flair.
Sant Ambroeus remains one of the few luxury hospitality destinations in Paris offering a true all-day dining experience. Guests can move seamlessly through the day, from breakfast and coffee service to lunch, aperitivo, dinner, and late-evening desserts.
For the summer season, Sant Ambroeus Paris introduces a series of new experiences and menu offerings designed to celebrate the rituals of Italian summer living.
A NEW APERITIVO EXPERIENCE
Launching at the end of June, Sant Ambroeus Paris will debut a dedicated aperitivo offering inspired by Milan’s celebrated pre-dinner tradition. Every afternoon from 3:00 to 6:00 pm, every cocktail arrives with a complimentary aperitivo tower – a tiered display of Milanese-style bites meant to be lingered over. The tower brings together warm puff-pastry mini pizzas, classic and pesto; golden mondeghili, the traditional Milanese meatball, served with bright salsa verde; crisp toasts; Castelvetrano olives, chips and cashews. Guests are welcome to settle in with the house cocktail list, and an à la carte menu is available throughout for those who wish to order beyond the tower.
SUMMER ON THE VERANDA
With warmer weather arriving in Paris, Sant Ambroeus’ outdoor veranda is now open, offering guests an elegant setting to enjoy breakfast, lunch, aperitivo, and dinner outdoors. Situated in one of the city’s most iconic neighbourhoods, the terrace provides a front-row seat to summer life in Saint-Germain-des-Prés.
NEW SUMMER MENU OFFERINGS
The culinary team has also introduced a collection of seasonal dishes designed to highlight the lighter flavours and ingredients of summer.
This season’s menu showcases both traditional Italian recipes and coastal-inspired dishes, featuring premium ingredients sourced from Italy and across Europe. New offerings span handmade pastas, fresh seafood, seasonal vegetables, and signature classics, reflecting Sant Ambroeus’ commitment to authentic Italian cuisine and refined simplicity.
Highlights from the new menu include Linguine al Limone e Gamberi Rossi, featuring Mazara del Vallo red shrimp tartare, shrimp bisque, lemon, and cardamom; Spaghettino alle Vongole with clams, parsley, white wine, and peperoncino; and Gnocchi allo Zafferano in Sugo di Ossobuco, housemade saffron gnocchi served with ossobuco sauce and Parmigiano Reggiano fondue.
Among the seasonal main courses, guests can enjoy Branzino al Vapore, a line-caught sea bass served with sautéed spinach and leeks; Orata all’Acqua Pazza, golden sea bream baked with white wine, capers, cherry tomatoes and basil; Costoletta alla Milanese, the restaurant’s traditional veal Milanese cutlet; and Paillard di Pollo e Verdure di Stagione, served with spring vegetables and mustard jus. Signature favourites including the Sant Ambroeus Cheeseburger, Filetto ai Pepi, Parmigiana di Melanzane and the Sant Ambroeus Lobster Roll also remain available throughout the season.
DISCOVER THE PASTICCERIA & TO-GO COUNTER
While much attention has focused on the restaurant dining room since opening, Sant Ambroeus Paris is also home to a dedicated pasticceria and takeaway counter – a cornerstone of the brand’s heritage dating back to Milan in 1936.
The pastry selection includes lemon coffee, raspberry, and lemon cupcakes, pizzicotti mandorla, flourless chocolate cake, chocolate chip cookies, lemon occhio di bue, pizzetta with mozzarella di bufala and basil, cornetti, fan cookies, Gianduia cake, and the signature Princess cake. The sandwich and savoury counter features paninetto prosciutto, paninetto cotto e fontina, paninetto caprese, tramezzino tonno e carciofi, tramezzino nordico, tramezzino uovo, tramezzino gamberi, tramezzino chichirichi, toast, and toast acciughino.
