Glass Brasserie is thrilled to announce an exclusive one-week-only residency of acclaimed Executive Chef Bernard Fiemeyer of Bull & Bear at Waldorf Astoria Orlando. Recognised as one of the Top 100 Restaurants in the United States by OpenTable, this is Bull & Bear’s first appearance outside the United States.

Taking over the iconic Sydney brasserie from Thursday 23 July* to Saturday 1 August 2026, Chef Fiemeyer in partnership with Glass’s own Chef de Cuisine, Natalie Murphy, have created a signature menu that will be available to enjoy during lunch and dinner throughout the residency.  Diners can expect an experience that is unpretentious and uncomplicated, with a menu that heroes signature dishes from both venues, paired with an award-winning wine program.
