Melbourne, get ready to sink your teeth into something special.
Grill’d is opening its newest restaurant on Thursday, 5 February 2026 – and it’s not just another burger joint. Located in the heart of Melbourne, this will be Grill’d biggest restaurant in the CBD, making it a landmark destination for locals and visitors alike.
Step into this shiny new two-level Grill’d and you’ll clock it fast: they’ve nailed the sweet spot between looking good and moving quickly. On street level, it’s all about speed—kiosk ordering for grab-and-go, a petite outdoor perch for a quick bite, and front-row seats to the ultimate people-watching show on one of Australia’s busiest pedestrian strips (around 12 million passersby a year… no big deal).
Downstairs is where things get seriously cool. Tucked beneath Melbourne’s streets is a proper slice of history: during World War II, this very basement—known as “The Dug-Out” was an Allied Services Club run by Myer Department Store, where servicemen and women ate, danced, and blew off steam.

Fast-forward to today and Grill’d has brought the space back to life, tipping its hat to the past while adding a cheeky Grill’d spin.
Got a little more time up your sleeve? Head downstairs—this is where Melbourne’s obsession with moody, character-packed underground dining really hits its stride. With room for 170 guests, it mixes original brickwork, heritage nods and warm lighting for a cosy, “stay for one more” kind of vibe. It’s still classic Grill’d; relaxed, delicious, no fuss—plus a first-ever private dining room that fits up to 70 mates, perfect for a birthday bash, a corporate do, or a very fancy burger night.
Founder Simon Crowe says this one is close to the heart. “Melbourne is our home and my passion, so opening our biggest restaurant in such an iconic, heritage-listed building is very exciting. We’ve created a space that’s welcoming and fun. This is the perfect spot to enjoy our healthy burgers in an environment only Grill’d can create.’
To kick things off, Grill’d is celebrating in true fashion by giving the first 754 customers a free burger which is a nod to Grill’d’s very first restaurant at 754 Glenferrie Road, Hawthorn.
Score one of your favourites for $10 this Thursday and Friday, plus, the full menu is available all day, including the iconic Mighty Melbourne burger, otherwise known as “Australians’ Favourite Burger”.
Grill’d Swanston Street isn’t just another burger spot. It’s a destination, a little bit historic, a little bit cheeky, and totally Melbourne.
Doors open Thursday 5 February 2026 at 9:30am, so come hungry, stay a while, and discover burgers done better; above and below ground.
