The Ritz-Carlton, Portland announces the appointment of Jocelyn Chacon as chef de cuisine of Bellpine, the property’s 20th-floor signature restaurant. Chacon brings more than a decade of experience in luxury hospitality and large-scale event operations, along with a globally influenced culinary perspective shaped by her roots in Mexico and career across the U.S.

We’re excited for our guests and locals to experience her vision.”
Born in Mexico, Chacon’s culinary style is deeply influenced by the flavors, techniques, and traditions of her upbringing, with an emphasis on bold ingredients and soulful preparation. Her time in Texas further shaped her approach, where she leaned into Texas-inspired flavors while refining her ability to balance comfort and refinement. Throughout her career, Chacon has also developed a strong foundation in Italian, Mediterranean, and Asian cuisines – experiences that continue to inform her layered, globally inspired menus.
Prior to this role, Chacon served on the culinary team at Renaissance Austin, where she worked across diverse culinary programs. Her career also includes experience with world-class hospitality brands, including Marriott International, Four Seasons, and Proper Hotels.
Chacon’s first menu as chef de cuisine spotlights one of the Pacific Northwest’s most anticipated harvests with a Truffle Season Menu available at Bellpine from Jan. 12 through mid-March 2026. The five-course menu celebrates Oregon’s truffle harvest with thoughtfully crafted dishes including Hokkaido Scallop Crudo with white truffle essence, house-made Truffle-Filled Ravioli with caramelized chanterelles, and White Truffle Mole Duck Tamal.
