Quilombo, Bangkok’s newest authentic Argentine steakhouse, has officially opened its doors following a highly successful soft launch period that welcomed strong early demand from diners and industry insiders alike.

Since opening quietly in late December, Quilombo has welcomed a steady flow of guests eager for traditional Argentine parrilla cooking, with early favourites including its charcoal-grilled dry-aged steaks, hand-cut empanadas, and classic house-made sauces served tableside. The positive response during the soft launch confirmed demand for a steakhouse experience rooted firmly in authenticity, value, and craft.

Created by hospitality veterans Christopher Mark and Manuel Palacio, Quilombo centres on elemental cooking over fire, premium grass-fed beef dry-aged in house, and a wine programme led by Argentine labels. The restaurant’s menu is intentionally focused, spotlighting technique, product integrity, and generous portions rather than reinvention.

The kitchen is led by Executive Chef Ferran Tadeo, whose background in Michelin-starred kitchens informs Quilombo’s disciplined approach to fire cooking, while allowing the parrilla and raw ingredients to take centre stage.

Set within a restored 400-square-metre stone castle, Quilombo offers an 80-seat dining experience across two levels, including a private dining room and a hidden room. Designed by MTM Studio, the interiors balance the building’s historic character with understated warmth inspired by the classic, refined steakhouse culture of 1950s Buenos Aires.

With its official opening now underway, Quilombo is open for dinner service from 5:30 PM to 12:00 AM, Tuesday to Saturday, and will expand to seven days a week from February onwards.
