Alila Seminyak is proud to introduce Savor the Archipelago, a new monthly program that brings Indonesia’s culinary and cultural richness to life. Blending the restaurant’s signature coastal dining philosophy with the incredibly diverse traditions of the archipelago, the series invites guests to journey across the islands through food, flavor, and festive performance.

Designed as a buffet and live-station showcase in front of the magnificent Segara Temple at the resort, Savor the Archipelago highlights the extraordinary variety of Indonesia’s culinary heritage while honoring Alila’s commitment to sustainability. Guests can explore everything from Bali’s ceremonial Babi Guling and Java’s comforting Soto Ayam to Makassar’s robust Konro Soup and Sumatra’s spiced Kambing Berlado—all prepared with thoughtful sourcing and seasonal produce.

At the heart of the evening is the Map of Sambal, an immersive station where fiery condiments from across the islands are laid out like a culinary atlas. From the fragrant Sambal Matah of Bali to the tangy Sambal Mangga of Java and the coconut-rich Sambal Kelapa of Sulawesi, each variety reveals a story of place, people, and tradition.

The experience is enriched with cultural performances, including a live gamelan ensemble and a fire show, echoing the rhythms of Indonesia’s ancient performance traditions. The oceanfront setting frames an evening where culinary culture meets an elevated yet welcoming dining experience.

True to Alila’s ethos, sustainability flows through every element of Savor the Archipelago. Live cooking stations are designed to minimize food waste, single-use plastics are eliminated, and local ingredients are sourced responsibly from trusted farmers and fishers.

Alila’s Savor the Archipelago debuted on 17 September 2025 and continues on a monthly basis. Priced at IDR 450,000++ per person, the event includes a curated buffet, live stations, cultural performances, and signature coastal ambiance.
