Tentsuru, the acclaimed tempura omakase restaurant led by Executive Chef Daiki Kawaguchi, invites guests to experience an elevated culinary journey with a limited-period menu. Available from 1 July through 31 August 2025, Tentsuru presents Memories of Goto, a refined omakase menu that brings together childhood nostalgia, precise technique, and seasonal mastery, all paired with the restaurant’s newly launched signature sake.
Drawing on nearly 20 years of experience in Michelin-starred kitchens, Chef Kawaguchi crafts a nostalgic menu rooted in his early days learning to cook alongside his father. Each course reflects a chapter of his upbringing, expressed through sophisticated techniques and premium ingredients.
Signature highlights of the menu include Grilled Suzuki (Sea Bass) served with summer vegetables and a house-made summer spice sauce, alongside Grilled Anango (Salt Water Conger Eel) Nigiri. Guests will also enjoy eight delicately prepared tempura courses, featuring two of Tentsuru’s most beloved signatures: the Uni Tempura, where fresh sea urchin is wrapped in aromatic perilla leaf, and the Miyazaki A5 Wagyu Tempura.
The experience continues with Goto Niku Udon, a handcrafted dish close to the chef’s heart that is topped with tender stewed beef. Rare and revered, these noodles are made using a thousand-year-old te-yori (hand-twisting) technique and camellia oil from the Goto Islands, resulting in their signature smooth and elastic texture. Made entirely from natural, island-sourced ingredients, Goto Niku Udon is a tribute to Chef Kawaguchi’s roots and his father’s hometown of Goto.
This satisfying meal ends on a sweet note with a refined dessert that combines the creamy richness of Coffee Ice Cream with the cool, tender bite of coffee jelly, accented by the fresh, juicy brightness of cherry – thoughtfully curated to complement the flavours of the omakase experience.
“This menu is a deeply personal expression of my culinary journey — each dish evokes a memory, from the comforting warmth of grilled seabass to the quiet elegance of Goto Niku Udon, a beloved recipe from my father’s hometown in Nagasaki,” shares Chef Kawaguchi. “I personally select the freshest seafood and peak-season produce, treating each ingredient with the utmost care to draw out its purest, most distinctive flavours. It is both a tribute to my roots and a reflection of the refined craftsmanship we uphold at Tentsuru.”
To complement the menu, guests will be served Tentsuru’s new signature sake — Kura No Hana Junmai Daiginjo — brewed with Kuro no Hana rice polished to 44% for purity. Light, floral, and refined, the sake enhances the subtle flavours of the dishes. Brewed by an award-winning sake maker in Miyagi Prefecture, it has received accolades including the KuraMaster Platinum Award, Milano Sake Challenge Silver, and Milan Sake Award Bronze.
The dining experience at Tentsuru is both immersive and refined. Set within a Zen-inspired space, the restaurant captures the artistry of tempura as a deceptively simple yet highly skilled craft. Elegant crane motifs — a nod to its name, a blend of ten (tempura) and tsuru (crane) — adorn the interiors. Guests are seated at a 15-seat main counter, offering an intimate, front-row view of Chef Kawaguchi’s precise and graceful technique. For private gatherings, a 7-seat dining room is also available, providing a more exclusive setting without compromising the interactive experience.
Available exclusively from 1 July – 31 August 2025, this limited-period menu is priced at $460++, with MyMillennium members enjoying a 15% discount. With only a few seats available per session, advance reservations are recommended.
