InterContinental Danang Sun Peninsula Resort, the five-star sanctuary nestled in 39 hectares of lush jungle on the Son Tra Peninsula, is celebrating a sparkling evening of success at the MICHELIN Guide Ceremony 2025, as La Maison 1888 retained its one MICHELIN star. This made it one of only nine restaurants nationwide to receive a one-star rating, and the only establishment in Central Vietnam to achieve this honour, reaffirming this iconic fine dining venue’s position at the pinnacle of Vietnamese gastronomy.
This glamorous annual event was hosted at InterContinental Danang on Thursday 5th June, which marked the first time the MICHELIN Guide Ceremony has been staged in Central Vietnam.
Set in an elegant French Indochine-style mansion overlooking the sea, La Maison 1888 was the first restaurant in Vietnam to be overseen by a MICHELIN three-star chef: currently the legendary Christian Le Squer. The doyen of French fine dining and Gault & Millau’s “Chef of the Year” 2023, Chef Christian has held three MICHELIN stars for 23 consecutive years. Now, he is showcasing his inimitable style of “haute couture” cuisine to discerning diners at La Maison 1888 with highly artistic à la carte dishes and tasting menus, all crafted using fresh, seasonal ingredients.
The restaurant’s talented local and international team is headed up by Florian Stein, the exceptional Chef de Cuisine who honed his skills at the renowned Le Chambard in France, and a multi-award-winning wine cellar – including some of the rarest labels in Vietnam – is curated by Head Sommelier Amedeo Bellini, and Assistant Sommelier Toan Nguyen, a rising star on Vietnam’s beverage scene.
According to MICHELIN, one star is awarded to “restaurants using top quality ingredients, where dishes with distinct flavours are prepared to a consistently high standard”. At La Maison 1888, Chef Christian transports diners on multi-sensory journeys through taste, texture, flavour and fragrance. Every dish is meticulously crafted with precision, elegance, and a deep respect for ingredients – much like a tailored masterpiece on a Paris runway. For example, the signature Le Spaghetti Debout (“Standing Spaghetti”), features meticulously assembled pasta strands with indulgent black truffle and premium ham, crowned with a cream of golden chanterelles poured at the tableside.
“To retain a MICHELIN star is a great honour. It reflects the consistency and refined artistry of our cuisine, which constantly evolves to evoke emotion,” Chef Christian commented.

This mesmerising menu will be available from 9th June 2025 onwards. Then from 11th to 15th June 2025, discerning diners will have an exclusive opportunity to meet and interact with Chef Christian as the doyen of French fine dining returns to Danang!
