Dinner by Heston Blumenthal at Atlantis The Royal is pleased to announce the appointment of Chris Malone as Chef de Cuisine. With 15 years of global experience, along with his drive and determination, Chris has been a key member of Atlantis Dubai’s culinary team for the past five years. He has contributed to the success of several of the destination’s award-winning fine-dining restaurants, including Dinner by Heston Blumenthal, from pre-opening to launch.
Building on the achievements of the one-Michelin-starred Dinner by Heston Blumenthal, Chris will lead a talented team of 32, overseeing all aspects of the restaurant’s operations. Working closely with Heston and James ‘Jocky’ Petrie, Group Culinary Director of The Fat Duck Group, he will play a key role in refining the restaurant’s menu, ensuring it stays true to Heston Blumenthal’s unique vision while incorporating his own vibrant approach to cuisine.
Originally from Perth, Australia, Chris began his career at 15 with a four-year apprenticeship at Fraser’s in Kings Park, Perth. His talent and ambition quickly attracted attention, leading him to win several prestigious Australian and international competitions. Chris honed his skills in some of Western Australia’s finest restaurants, including the two-hat Clarkes of North Beach in Perth. He also earned accolades such as the ACF National ‘Apprentice of the Year’ and The West Australian Good Food Guide ‘Young Chef of the Year’.
In 2018, Chris caught the eye of renowned Swiss chef Daniel Humm, who invited him to join the team at the three-Michelin-star Eleven Madison Park in New York. After pushing the limits of his craft in one of the world’s most celebrated kitchens, Chris joined the pre-opening team of Davies and Brook, located inside Claridge’s Hotel in London, before moving to Dubai to lead Ossiano, which gained a Michelin star. During his time, Chris transformed the dining experience from a tapas-style multi-course offering to a tasting experience. Seeking new opportunities, Chris played a pivotal role in the pre-opening and opening of Dinner by Heston Blumenthal as Sous Chef for two years, before joining the pre-opening team of FZN by Björn Frantzén, sibling restaurant to the three-Michelin-star Frantzén in Stockholm and Zén in Singapore.

In June 2024, Dinner by Heston Blumenthal was once more awarded a Michelin star. This year, the restaurant was ranked No. 33 on MENA’s 50 Best Restaurants and retained its three-toque status in the Gault&Millau UAE Guide and ‘Wine Offering of the Year’ for the third consecutive year.
