Chef Christopher is an American barbecue legend. A graduate of the California Culinary Academy, he honed his skills in San Francisco and Hong Kong before moving to Phuket. An expert in the art of butchering, smoking, curing and grilling, he has crafted a menu that embraces contemporary techniques while paying homage to history and tradition.
Diners can drop into Smokestack throughout the day and discover a light lunchtime menu that features gourmet sandwiches, burgers, salads, and snacks, plus a selection of main dishes and sweet treats. Then, as the sun sets over the Andaman Sea, our pit master turns up the heat! The dramatic dinner menu invites meat lovers to savor signature BBQ creations such as Slow-Cooked Beef Short Rib, which is cooked overnight and finished in fruit tree smoke, or Smoky Grain-Fed Beef Brisket, house-rubbed and slow-cooked to perfection until the meat simply melts in the mouth. Smoky, crave-worthy creations like fried pies stuffed with short rib ragu, or Detroit-style slices with nduja cream and smoked chicken. It all leads up to a one-night-only kitchen takeover on 30 April at Goodfellas.
