From April 1st to 30th, 2025, Chef Tan will showcase a meticulously crafted menu that blends European techniques with Thai ingredients, celebrating the essence of VIVIN’s local, natural, and artisanal products.

The Grocerant Takeover concept at VIVIN Asok offers diners a seasonal, limited-time menu curated by top chefs who use VIVIN’s premium grocery selection to create unique, ingredient-driven dishes. This initiative highlights Thailand’s finest artisanal produce, allowing chefs to experiment with organic and natural, high-quality, sustainable, locally sourced ingredients while offering diners a rare opportunity to taste one-of-a-kind creations.

For this special collaboration, Chef Tan presents a menu that balances elegant and bold Thai flavours intertwined with European tastes and craftsmanship. Chef Tan incorporates VIVIN’s natural dried duck breast, organic Thai cheese, and premium smoked seafood alongside iconic Thai Thai-flavours such as coconut cream and the classic Thai dish “ฟักทองผัดไข่” (Fak Thong Pad Kai) pumpkin and egg stir-fry. Each dish has been thoughtfully composed to enhance the natural characteristics of the ingredients, reflecting both the chef’s and VIVIN’s culinary philosophy of local and sustainable.

Chef Tan follows in the footsteps of previous Grocerant Takeover chefs, including Chef Daniel Bucher of Pridi Cacaofevier and other past collaborations have featured Michelin-rated chefs such as Amerigo Tito Sesti and Yoan Martin (Electric Sheep, formerly of J’aime Bangkok), Nooror Somany Steppe (Blue Elephant), Ferran Tadeo Transparant Standee - Takeover GOAT- ASOK-01Domenech (previously of Embassy Room, Park Hyatt), and Hervé Frerard (Brasserie 9). VIVIN continues to push culinary boundaries with innovative partnerships that highlight the best of Thai terroir and gastronomy.

  • Smoked Tuna & Tomato Salad – 360 THB
    Smoked tuna paired with organic tomatoes, crisp red radish, and creamy cottage cheese. Dressed in a fragrant organic coconut oil mango vinaigrette and finished with crunchy macadamia nuts.

  • Duck Breast & Pumpkin Risotto – 490 THB

    VIVIN’s natural dried duck breast served atop a creamy risotto, tossed with “ฟักทองผัดไข่” (Fak Thong Pad Kai), a stir-fried pumpkin egg purée. Made with organic brown rice, GranMonte’s Spring Chenin Blanc white wine, and Thai spices, then finished with cottage cheese and toasted cashew.

  • Vanilla Gelato French Toast Croissant – 340 THB
    A buttery croissant caramelised into French toast, served with local vanilla gelato, coconut cream, organic puffed rice, and a fig-orange compote.
