VIU Restaurant, located on the 12th floor of The St. Regis Bangkok, presents a unique six-course dinner crafted by five outstanding chefs from the renowned Disciples Escoffier. For one night only on Thursday, March 6, 2025, each chef will showcase their signature canapé along with a beautifully handcrafted Mediterranean course, highlighting their individual culinary talents.
Founded in 1954 in France, Disciples Escoffier International – named after Auguste Escoffier, an innovative chef who revolutionized French gastronomy and cooking method – is a non-profit organization with members worldwide, dedicated to
promoting excellence in gastronomy through education, mentorship, and exclusive dining experiences. This meaningful collaboration brings together an impressive group of talented culinary chefs in Thailand including:

The gathering begins with a selection of special canapés, cocktails and mocktails, setting the tone for what promises to be an engaging dining experience. As guests mingle, they will enjoy creations like Wasabi Tarama with Blinis and Cadoret “La Lune” Oyster Dubarry. The main degustation dinner features a procession of handcrafted courses starting with an Italian-inspired Selection of Bread served with extra virgin olive oil and aged Modena balsamic vinegar, alongside a rich Pickled Beetroot Ravioli. This is followed by a Mediterranean Carabineros Tartare, and a delicate White Asparagus Carpaccio presented with Sturia Oscietra Caviar. A highlight of the evening, the Patagonian Toothfish is served in the French style, accompanied by bouillabaisse vegetables and saffron soup. For the main course, an Australian Wagyu Westholme Beef Tenderloin showcases a variation of eggplant with smoked paprika jus, before the evening rounds off with a deconstructed Valrhona Tiramisu for dessert.
Known for its vibrant and inviting atmosphere, VIU offers hearty and handcrafted Mediterranean dishes inspired by Chef Matteo Fontana’s heritage. This 10-Hand Disciples Escoffier Dinner is priced at THB 3,000++ per person, including five wine pairings. The dinner on Thursday, March 6, 2025 starts at 6:00 PM with a lively cocktail reception, followed by a hearty six-course dinner at 7:00 PM.
