Mount Cinnamon Beach Resort is thrilled to announce the appointment of Mr. Mario Dorantes as General Manager of the newly renovated property located on picturesque Grande Anse Beach, Grenada in the Caribbean.
The resort said that Dorantes’ role would be “integral to the planning of Mount Cinnamon Beach Resort’s growth strategy” which aims to increase the brand’s presence on the island and beyond, making it the “first choice” for visitors travelling to the island. He will also be tasked with developing the resort’s Food and Beverage offering with Head Chef, Jason Joseph, particularly focusing on sustainability through championing local produce.
Following recent renovations and developments at the resort, Dorantes joins at a pivotal period of growth for the independently-owned business, “offering industry experts and its guests amazing opportunities to explore Grenada, as its popularity continues to grow,” he noted. Recent works included a new renovated restaurant, called The Flying Fish, which serves elevated Caribbean-inspired, farm-to-table cuisine, and extensive renovations of its shared spaces – the bar, pool, and lounge – overseen by the resort team and local architect Irina Kostka.
Dorantes has honed his skills working at luxury resorts and hotels across the world, including One & Only Resorts, Four Seasons and the Viceroy Hotel Group, Dorantes is also a certified sommelier with a Bachelors Degree in Hospitality Management – including an added focus on Food and Beverage management and development – from the Universidad del Valle de Mexico, part of the esteemed Glion Institute of Higher Education. Most recently, he held senior positions at the internationally recognised Blue Diamond Resorts in the (Mexican) Caribbean and Karisma Hotels & Resorts, Dominican Republic.
Dorantes’ experience, working alongside Chef Jorge Vallejo at Chablé Yucatán, recently awarded two Michelin Keys, and having obtained the prestigious four-diamond award from AAA for Margaritaville Beach Hotel in Riviera Cancun; and being awarded the Wine Spectator Restaurant Award, will prove invaluable in this Food and Beverage focus area. Other restaurant collaborations of note include the relaunch of the Four Seasons Peninsula Papagayo, Costa Rica, and the development of the culinary programme at Azulik Tulum.
The digitalisation of internal management platforms – including the development of the Mount Cinnamon App – to further drive sales and direct-to-consumer engagement, will be a priority. “The technology and digital transformation of the business will be vital to optimise processes in our operation but it also adds value to the experiences we offer our guests. It also gives us the ability to share our unique stories. Mount Cinnamon Beach Resort has such a distinct personality and it will be great to bring that to the forefront.
