Kimpton Kitalay Samui, the idyllic island resort on Koh Samui’s northeast shore, is thrilled to announce that SHIO, its latest sushi bar and Japanese restaurant concept, is returning due to overwhelming demand and will showcase its creative cuisine and innovative signature rolls to resort guests and local residents from January 2025 onwards.

SHIO, which means “sea tides” in Japanese, first arrived at Kimpton Kitalay Samui in October 2024, when it wowed diners with its modern take on Japanese gastronomy. Helmed by Wacharun Imarramsak, or Chef Run, the culinary pioneer from In the Mood for Love, the popular Bangkok sushi bar and omakase restaurant, this original dining destination made a striking impression during its first month-long residency on the island. Now, SHIO will return to Samui from January 7 to May 9, 2025, giving its discerning diners four full months to discover Chef Run’s dazzling dishes.

Sashimi

One of SHIO’s defining attributes is the quality and freshness of its seafood, with premium fish imported directly from Japan. From buttery Chu-toro to delicate Hamachi, every piece is carefully selected to maximize the taste and tenderness. With these high-end ingredients, Chef Run presents an assortment of fun, flavorful and finely crafted Japanese delights, including his iconic rolls, which burst with color and flavor. Signature options include Wave Rider (barbecued eel, shrimp tempura & ebiko wrapped with avocado), High Tide (scallop & ebiko topped with seared crab meat) and Samui Song (barbecued eel, cream cheese, crab, cucumber & ebiko).

SHIO also presents an array of appetizers such as Salmon & Lemon (thinly sliced salmon sashimi with ponzu sauce) and Maguro Kimchi (fresh tuna sashimi marinated in spicy kimchi), mouth-watering main courses including Gindara Saikyo Yaki (grilled black cod with miso), and Chirashi Don (assorted sashimi served over sushi rice), as well as a sublime selection of Sashimi and Nigiri. Guests can also discover four all-new menu items which have been added exclusively for 2025!

For its highly anticipated return, SHIO has expanded its repertoire with four exclusive new menu items that are sure to tempt even the most seasoned sushi aficionados, including Shiromi Ponzu, a delicate dish of thinly sliced shiromi sashimi paired with zesty ponzu sauce; Tide Turner, a delightful roll of BBQ eel, cream cheese, and cucumber topped with sesame and teriyaki sauce; Ocean Heat, a spicy and bold

combination of salmon and cucumber elegantly finished with sesame; and Scallop Shore, a luxurious roll featuring scallop, cucumber, ebiko, and spicy sauce.

With its natural interiors, adorned with wood, rattan, bamboo and ceramics, and a background of Japanese beats, SHIO blends the rustic-chic vibe of a Samui beach lounge with the authentic essence of a Japanese sushi bar, creating an atmosphere that is warm and friendly yet stylish and sophisticated.
