Pastry Chef Arthur Carré (Ex Mimi’s) brings over 13 years of expertise to the kitchen. Beginning his culinary journey in France, Arthur worked at the prestigious Ferrandi Paris, before refining his craft under the guidance of renowned chef Tom Coll in a luxury hotel in Dubai. There, he garnered recognition for his exceptional talent, particularly in the art of chocolate sculpture, earning accolades in several pastry competitions. Now working with the team at Capella and leading the pastry team, Arthur will introduce new innovative and refined pastry creations.
Carré’s first project has been designing a new limited-edition Festive Afternoon Tea in the stunning, light filled restaurant, Aperture. Quite possibly the most luxurious festive themed afternoon tea in Sydney, chef Carré has curated a beautiful three course menu filled with eleven savoury and sweet house made specialties plus a special Little Stars Afternoon Tea for children – perfect for creating new traditions with your family.
