DINNER BY HESTON BLUMENTHAL

The one Michelin-starred Dinner by Heston Blumenthal, invites guests on a culinary journey through the ages, showcasing dishes inspired by the tastes and flavours of Britain. This December, guests can savour a special five-course tasting menu, featuring Roast Scallops & Cucumber (c.1965), Plum Meat Fruit (c.1500), Salmon Dressed in Verjus (c.1716), Roast Venison (c.1846) and Festive Tart (c.1846). While on Christmas Eve and Christmas Day, the restaurant will present a four-course tasting menu including the iconic Meat Fruit (c.1500), Hay Smoked Salmon (c.1730), Roast Chicken (c. 1672) with all the trimmings and Smoked Walnut Mousse (c.1600).

Experience Mediterranean cuisine by acclaimed chef Costas Spiliadis at estiatorio Milos, with stunning views of the Skyblaze Fountain. The centerpiece of the restaurant is the seafood market displaying the freshest catch. Guests are taken to the market to create their own dining experience choosing their menu with the help and guidance of experienced Milos Chefs. Signature dishes include the Milos special, a tower of paper-thin, crispy fried zucchini and eggplant slices over rich, house-made tzatziki and Greek saganaki cheese, creating a perfectly balanced entree. Milos must-tries are the grilled octopus and the tomato salad. Guests can also enjoy a vast selection of mostly Greek and Mediterranean wine, with over 300 labels available.

Atlantis The Royal’s Jaleo by José Andrés is offering a Christmas Eve and Christmas Day feast. Imagined through the creative lens of the globally renowned chef and entrepreneur, Jaleo which translates to lively in Spanish, brings alive the spirit and flavours of Spain by showcasing the rich regional diversity of Spanish cuisine in a festive, stylish, and casual atmosphere. Guests can look forward to grilled oysters with pickles and escabeche, steak tartare with white truffle and piparras chilli, as well as seared scallops with fennel, mussel, and saffron sauce. Throughout both days, diners will also be entertained in true Spanish fashion, with flamboyant flamenco dancers and live Spanish guitarists.

Celebrate the festive season with La Mar by Gastón Acurio. Hailing from Lima, La Mar celebrates the authentic and diverse flavours of Peruvian gastronomy, inviting diners to tour through Peru’s incredible cultural and culinary diversity ranging from traditional seafood cebiche to whole fish cooked in a charcoal-fired oven. On Christmas Eve, guests can enjoy a selection of festive specials, while Christmas Day will feature a special festive brunch. The holiday offerings will include grilled langoustine with aji amarillo and caviar emulsion, kobe beef nigiri, and tostone Nikkei with crispy sushi rice, tuna tartare, and black truffle ponzu emulsion.
