Circular Quay’s Hacienda Bar & Lounge, located inside Pullman Quay Grand Sydney Harbour Hotel returns with a vibrant new look, colliding Latin American flair and Sydney’s signature cool. This reimagined harbourside oasis, nestled where the city’s skyline meets the sea, invites guests to explore a fresh menu crafted by chef Rosy Scatigna, a new cocktail list and refreshed interiors.

By day, Hacienda is awash in natural light, spilling through floor-to-ceiling windows that frame sweeping views of Sydney Harbour and cast a glow over the sprawling greenery, luxurious golden accents and natural textures. As the sun sets, Hacienda transforms with soulful Latin beats and live bands playing Afro-Cuban jazz, creating a vibrant energy that invites exploration at every turn.

The new food menu at Hacienda, bursting with Latin American flavours reinterpreted through a modern Australian lens, is the result of a collaboration between Executive Chef Jiwon Do and Rosy Scatigna (formerly of Bar Morris, Shell House, and Aria), in her newly appointed role overseeing the culinary direction across Accor’s hospitality portfolio. Light bites and zesty share plates are rooted in fresh local ingredients like the Poached Prawns with espelette pepper, Lobster Tostada, Crab Linguine with charred habanero, Grilled Oyster Mushrooms with mole blanco, Swordfish A La Plancha with tomatillo salsa verde and a signature hacienda club sandwich

The cocktail list, meanwhile, brims with approachable, punchy drinks crafted by Proof Creative that elevate Latin American classics with Australian sensibilities. The Luz Dorada (“Golden Light”) features Citrus Tried & True Vodka with pink grapefruit oil and Aperol – and Verde – a bold blend of Husk Pure Cane Rum, Cucumber, Green Capsicum & Lime Leaves.

“We envisioned a place that brings Latin American energy to harbourside elegance, where the worries of the outside world melt away with the first sip of a fresh margarita, says James Finnigan-Curtis, Director of Restaurants & Bars (formerly of Sydney Common, Aria, and Andaz Singapore). “Hacienda captures that perfect blend, offering one of Sydney’s most iconic backdrops with a bold new experience that is as spirited as it is refined”.

Hacienda’s Golden Hour, 4pm-6pm, Tuesday to Friday, transforms sunset into a vibrant tribute to Latin America’s spirit, with the Margarita as the star. For $15, guests can enjoy a choice of three distinctive margaritas: the Picante, the classic Tommy’s; or the smoky Fuma. To complement the drinks, a curated snack menu offers elevated bites including a Habanero Smash Burger, Lobster Tostadas and Signature Hacienda French Fries Service.

Hacienda will also be celebrating New Year’s Eve, with guests able to book a four hour package from 7pm – 1am which will include an oversized antipasti charcuterie and cheese spread, followed by delectable roaming canapes, chef’s station with seafood mains, a dessert grazing table and bold mouthwatering cocktails for $479pp. Sydney’s best live DJs will be playing to uninterrupted front row views to Sydney Harbour’s fireworks display.
