Rome Cavalieri, A Waldorf Astoria Hotel introduces its upcoming festive programming, inviting guests to experience the magic of the holidays under the theme of “Royal Glam.” With the festive joy and sense of connectedness that comes from this time of year, guests may enjoy unforgettable moments through elegant décor and exceptional culinary creations, indulgent wellness experiences, and vibrant entertainment.
Christmas Eve & Day
Rome’s historic first and still only Michelin Three-Star restaurant, La Pergola, will offer two exceptional, multi-course dinner experiences by renowned Chef Heinz Beck, accompanied with wine pairings thoughtfully selected by Sommelier Marco Reitano from the restaurant’s award-winning, prestigious collection of more than 73,000 bottles. On Christmas Eve, a 7-course seafood menu honoring the tradition of the Feast of the Seven Fishes will showcase amberjack with smoked Rosa di Gorizia and wild fruits, and Lobster with almond cream, red wine sauce, and citrus zabaglione, among other dishes. On Christmas Day, an 8-course meal will highlight Capon tortellini with pumpkin, Grana Padano sauce, and white truffle from Alba, as well as Lamb with nepitella scented artichokes and offal sauce. Both dinners will be priced at €680 per person and offer live music.
Uliveto Restaurant, led by the new Executive Chef Nicolas Cuomo, will showcase two distinct Christmas Eve tasting menus with wine pairings, offering guests the option of a fish or meat dinner. Each meal offers six courses and a large selection of appetizers, with menu highlights including Tagliolini pasta with dried fish roe, clams, and fennel; Turbot fillet covered with saffron on green vegetable soup and Jerusalem artichoke chips; and Breaded beef filet mignon on a bed of sautéed spinach with potato and black truffle pavé. Each dinner will be priced at €140 per person, and have live music performances.
On Christmas Day, Uliveto will serve its renowned Sunday Brunch in the Garden Lobby with traditional Italian Christmas appetizers and delectable desserts. In traditional fashion, Santa Claus will arrive on his sleigh with gifts for young guests (€190 per adult, €95 per children).
Opulent New Year’s Festivities
La Pergola invites guests to a sparkling 9-course New Year’s Eve Gala Dinner with wine pairings, featuring an extravagant meal of Barbecue oyster with helichrysum and fennel; Trapani pesto-filled tortellini with scampi and baby squid; Venison with black truffle and beet, bark sauce and cocoa; and more (€1,750 per person). The evening will include live music and spectacular fireworks to welcome the New Year.
Uliveto will serve a 5-course meal with wine pairings, which will begin with an Oysters and Champagne welcome, followed by a grand selection of appetizers. Menu highlights include Champagne and saffron risotto with lobster medallions; Shrimp and pesto sauce crusted seabass with cherry tomato water gelée; and Veal fillet in black truffle crust, Jerusalem artichoke puree and seasonal mushrooms sautéed with white pepper sauce. The evening includes a grand dessert buffet, music, as well as entertainment and games for children (€450 per person).
Guests are also invited to the Terrazza degli Aranci event room on the hotel’s top floor for the “New Year With A View” experience, offering a dazzling fireworks display paired with a decadent dessert buffet and Moët & Chandon Réserve Impérial bottles (€190 per person). Tiepolo Lounge & Terrace will also offer a night of gourmet pizzas and champagne pairings, as well as traditional lentils and pork cotechino at midnight (€250 per person).
Festivities continue with brunch on January 1st, offering sweet and savory dishes, accompanied by fun-filled entertainment for children (€180 per adult, €90 per child). Honoring Italian tradition, Uliveto will also host an Epiphany Brunch on January 6th, featuring live music and a surprise visit from La Befana, who will delight young guests with sweet treats (€160 per adult, €60 per child).
A Toast to the Season
From December 8, 2024 to January 6, 2025, Tiepolo Lounge & Terrace presents three signature festive cocktails developed by the skilled mixology team, welcoming guests to get in the holiday spirit with a superlative toast. Developed by the lounge’s Head Bartender, Angelo Severini, the special cocktails include the Gold Royal Glam, blended with Rye Whiskey, Peach Brandy, cedar wood essential oils and a mix of herb and floral bitters; Noël Royal, a Moët & Chandon Impérial Champagne base paired with Heering cherry liqueur, gold powder, a raw sugar cube, garnished with an orange twist; and Christmas Kiss, a non-alcoholic drink which draws inspiration from the holiday’s signature red color and Holly berries, resulting in a deliciously festive drink that is citrusy, spicy, and warm.
Festive Glow
Cavalieri Grand Spa Club, the hotel’s award-winning spa facility, will feature an exclusive Natura Bissé Christmas treatment called the “Lights of the Pantheon.” This luxurious facial restores luminosity, symbolizing how the light of the equinox sun caresses the works of art found in the Pantheon. This treatment will also target the brilliance and deep hydration of one’s face through serums and contour massaging (€200 for 50 minutes).
Similarly, the spa will offer a special New Year’s body treatment, the “Imperial Roman Brushing,” offering a dry brush exfoliation to remove dead skin cells and reveal a luminous, smooth complexion, while revitalizing circulation, toning muscles, and boosting energy. The aromas of essential oils recreate an atmosphere of ancient spas, allowing guests to indulge in a moment of well-being (€180 for 50 minutes).
